Brisbane's newest restaurant might have the most breathtaking backdrop in the entire city
Perched on the edge of Brisbane's highest peak, The Summit Restaurant boasts some of the most sublime views of the city skyline out to Moreton Bay. The multi-million-dollar revitalisation of the heritage-listed venue – including a refined dining room, a vibrant brewpub-style public bar and an expansive verandah – has been brought to life by Mantle Group, whose resume includes The Charming Squire, The Sound Garden, Babylon and Tai Tai.
At the kitchen's helm is Queensland hospo legend Kym Machin, who brings more than 30 years of culinary experience from top venues, such as Urbane, Bare Bones Society and Same Same But Different.
Sustainability and seasonality are at the heart of the menu, which traverses Queensland's diverse climates, regions and native ingredients. Diners are encouraged to journey through themed sections titled Sea, Air, Land, Earth and Garden, with small plates to start and sweets to round out the experience.
Machin said, 'When you're standing at The Summit, you can see for miles – from the city to the bay and out to the hinterland – and we wanted the menu to reflect that sense of scale and beauty.'
Bread is baked in-house daily and paired with cultured butter, smoked salt and honey harvested from The Summit's own beehives. Other standout starters, including Elliott Heads' spanner crab salad and ocean trout gravlax, are served with fresh herbs picked from the restaurant's edible garden.
Mains are best enjoyed as a share-style feast, with highlights including Moreton Bay prawns topped with native herb chimichurri, roast duck smoked over paperbark, almond-fed pork with pickled apples and pumpkin agnolotti in brown butter sauce. If you get decision anxiety, the kitchen can take the reins with two chef-curated tasting menus ($79 and $99). Or you can simply drink in the ripper views with a cocktail and a casual bite from the bar menu.
The opening of The Summit Restaurant marks just the first stage of this multi-million-dollar transformation at Mt Coot-tha summit. While still in the planning stage, the team hopes to deliver the full transformation ahead of the Brisbane 2032 Olympic and Paralympic Games – complete with a two-level Pavilion venue, a boutique gin distillery and a cultural tourism experience that honours the mountain's rich history and significance.

The 76,000 square-foot 'Skyloop' - which will be similar to the Sands SkyPark at Marina Bay Sands - will have 360-degree views. On the lower levels, the public will be able to explore an observatory, restaurants and rooftop gardens. On higher levels, guests can access more private experiences such as private cabanas, infinity-edge pools and sprawling palm trees. And one major feature will be a cantilevered wellness terrace - essentially hanging in the air - for yoga, arts and other events. There is more too, as the hotel is expected to have a 15,000 seat arena, with the backdrop of Marina Bay, for live entertainment. Inside the hotel will also be a number of different dining experiences, shops, a gaming area, spa and wellness facilities. And it will be designed by the same firm that designed Sphere in Las Vegas and the O2 Arena in London. The entire hotel is expected to be tilted at a 45 degree angle to give guests amazing views of Marina Bay and the Singapore Strait. We have rounded up some of the best spots in Scotland for an outdoor swim. This weekend is set to bring sizzling temperatures across Scotland. With highs of 30 degrees Celsius predicted in parts of the country, it might be a record-breaking few days of weather. There comes a point when the heat can get too much and start to become uncomfortable. If there was ever a weekend to go for a swim, this is it. All over the country, there are indoor pools where Scots can head to cool down. There is also no shortage of picturesque beaches where you can dip your toes in the water. However, if you are after something a bit different, Scotland is also home to a number of lidos and outdoor swimming pools. These are perfect if you still want to make the most of the good weather while also taking advantage of the fun that swimming pools bring. To help keep cool, The Daily Record has rounded up five of these outdoor swimming spots around Scotland. From Fife to Wick, you won't be too far from at least one of them. Stonehaven Open Air Swimming Pool, Stonehaven The Stonehaven Open Air Swimming Pool is one of the most popular and renowned outdoor swimming pools in Scotland, and for good reason. Situated in the coastal Aberdeenshire town of Stonehaven, the attraction is the only art deco Olympic-sized seawater lido in the UK. The pool, which will remain open for the summer until early September, is heated and offers everything from fun sessions with inflatables for families to quiet swims. Gourock Outdoor Pool, Gourock Now open for the summer season, the Gourock Outdoor Pool is a heated saltwater pool situated in the Inverclyde town of Gourock. Part of Inverclyde Leisure, the pool offers incredible views out over the Clyde Estuary to enjoy as you swim. The pool, which has been refurbished with modern changing facilities, includes a diving board—while there is also a separate kiddies' pool. Like Stonehaven Open Air Swimming Pool, Gourock Outdoor Pool also offers 'Starlight Swims' where visitors can enjoy a refreshing night-time dip. New Cumnock Outdoor Swimming Pool, New Cumnock New Cumnock in Ayrshire is also home to a popular outdoor swimming pool, open seven days a week through the summer season. Situated just a 10-minute walk from the New Cumnock train station, it is Scotland's only public outdoor freshwater heated swimming pool. New Cumnock Outdoor Swimming Pool offers lane swimming, fitness classes, and private exclusive-use bookings. The pool also features changing rooms and showers. St Monans Tidal Pool, Fife Finally, St Monans Tidal Pool is a historic outdoor pool that has been restored by the local community. The pool sits in the shadow of an old windmill that was once used to pump seawater, and is a great place to watch the sun go down. Unlike some other pools on this roundup, St Monans Tidal Pool is not maintained and so swimmers enter the water at their own risk.
