Seed oils are toxic, says Robert F. Kennedy Jr. – but it's not so simple
Before Robert F. Kennedy Jr. became Secretary of Health and Human Services in the Trump Administration, he joined a whole host of health influencers in proclaiming that widely used cooking oils such as canola oil and soybean oil are toxic.
T-shirts sold by his 'Make America Healthy Again' campaign now include the slogan, 'make frying oil tallow again' – a reference to the traditional use of rendered beef fat for cooking.
Seed oils have become a mainstay of the American diet because unlike beef tallow, which is comprised of saturated fats that increase cholesterol levels, seed oils contain unsaturated fats that can decrease cholesterol levels. In theory, that means they should reduce the risk of heart disease.
But research shows that different seed oils have varying effects on risk for heart disease. Furthermore, seed oils have also been shown to increase risk for migraines. This is likely due to their high levels of omega-6 fatty acids. These fats can increase inflammation, a heightened and potentially harmful state of immune system activation.
As a family physician with a Ph.D. in nutrition, I translate the latest nutrition science into dietary recommendations for my patients. When it comes to seed oils, the research shows that their health effects are more nuanced than headlines and social media posts suggest.
Seed oils — often confusingly referred to as 'vegetable oils' — are, as the name implies, oils extracted from the seeds of plants. This is unlike olive oil and coconut oil, which are derived from fruits. People decrying their widespread use often refer to the 'hateful eight' top seed oil offenders: canola, corn, soybean, cottonseed, grapeseed, sunflower, safflower and rice bran oil.
These oils entered the human diet at unprecedented levels after the invention of the mechanical screw press in 1888 enabled the extraction of oil from seeds in quantities that were never before possible.
Between 1909 and 1999, U.S. consumption of soybean oil increased 1,000 times. This shift fundamentally changed our biological makeup. Due to increased seed oil intake, in the past 50 years the concentration of omega-6 fatty acids that Americans carry around in their fatty tissue has increased by 136%.
Omega-6 and omega-3 fatty acids are essential nutrients that control inflammation. While omega-6s tend to produce molecules that boost it, omega-3s tend to produce molecules that tone it down. Until recently, people generally ate equal amounts of omega-6 and omega-3 fatty acids. However, over the past century, this ratio has changed. Today, people consume 15 times more omega-6s than omega-3s, partly due to increased consumption of seed oils.
In theory, seed oils can cause health problems because they contain a high absolute amount of omega-6 fatty acids, as well as a high omega-6 to omega-3 ratio. Studies have linked an increased omega-6 to omega-3 ratio to a wide range of conditions, including mood disorders, knee pain, back pain, menstrual pain and even preterm birth. Omega-6 fatty acids have also been implicated in the processes that drive colon cancer.
However, the absolute omega-6 level and the omega-6 to omega-3 ratio in different seed oils vary tremendously. For example, safflower oil and sunflower oil have ratios of 125:1 and 91:1. Corn oil's ratio is 50:1. Meanwhile, soybean oil and canola oil have lower ratios, at 8:1 and 2:1, respectively.
Scientists have used genetic modification to create seed oils like high oleic acid canola oil that have a lower omega-6 to 3 ratio. However, the health benefit of these bioengineered oils is still being studied.
Part of the controversy surrounding seed oils is that studies investigating their inflammatory effect have yielded mixed results. One meta-analysis synthesizing the effects of seed oils on 11 inflammatory markers largely showed no effects – with the exception of one inflammatory signal, which was significantly elevated in people with the highest omega-6 intakes.
To complicate things further, genetics also plays a role in seed oils' inflammatory potential. People of African, Indigenous and Latino descent tend to metabolize omega-6 fatty acids faster, which can increase the inflammatory effect of consuming seed oils. Scientists still don't fully understand how genetics and other factors may influence the health effects of these oils.
A review of seven randomized controlled trials showed that the effect of seed oils on risk of heart attacks varies depending on the type of seed oil.
This was corroborated by data resurrected from tapes dug up in the basement of a researcher who in the 1970s conducted the largest and most rigorously executed dietary trial to date investigating the replacement of saturated fat with seed oils. In that work, replacing saturated fats such as beef tallow with seed oils always lowers cholesterol, but it does not always lower risk of death from heart disease.
Taken together, these studies show that when saturated fats such as beef tallow are replaced with seed oils that have lower omega-6 to omega-3 ratios, such as soybean oil, the risk of heart attacks and death from heart disease falls. However, when saturated fats are replaced with seed oils with a higher omega-6 to omega-3 ratio, such as corn oil, risk of death from heart disease rises.
Interestingly, the most highly purchased seed oil in the United States is soybean oil, which has a more favorable omega-6 to 3 ratio of 8:1 – and studies show that it does lower the risk of heart disease.
However, seed oils with less favorable ratios, such as corn oil and safflower oil, can be found in countless processed foods, including potato chips, frozen dinners and packaged desserts. Nevertheless, other aspects of these foods, in addition to their seed oil content, also make them unhealthy.
A rigorous randomized controlled trial – the gold standard for clinical evidence – showed that diets high in omega-3 fatty acids and low in omega-6 fatty acids, hence low in seed oils, significantly reduced the risk of migraines
In the study, people who stepped up their consumption of omega-3 fatty acids by eating fatty fish such as salmon experienced an average of two fewer migraines per month than usual, even if they did not change their omega-6 consumption. However, if they reduced their omega-6 intake by switching out corn oil for olive oil, while simultaneously increasing their omega-3 intake, they experienced four fewer migraines per month.
That's a noteworthy difference, considering that the latest migraine medications reduce migraine frequency by approximately two days per month, compared to a placebo. Thus, for migraine sufferers — 1 in 6 Americans — decreasing seed oils, along with increasing omega-3 intake, may be even more effective than currently available medications.
Overall, the drastic way in which omega-6 fatty acids have entered the food supply and fundamentally changed our biological composition makes this an important area of study. But the question of whether seed oils are good or bad is not black and white. There is no basis to conclude that Americans would be healthier if we started frying everything in beef tallow again, but there is an argument for a more careful consideration of the nuance surrounding these oils and their potential effects.

We're not talking about suffering through glasses of water mixed with a chalky fiber supplement, though. You can score your daily dose from a wide variety of high-fiber foods. One of the most potent sources of fiber is a sweet, versatile, tasty fruit that's an EatingWell editor favorite. It turns out that the same fruit is also a gut-health doctor-recommended option and might be the all-around best fruit for gut health, according to a February 8, 2023, Instagram reel from Will Bulsiewicz, M.D. So what is the best fruit for gut health? Raspberries. "I'm a huge fan of raspberries … First off, they're friggin' delicious," Bulsiewicz shares in the caption. "I mean, seriously. They are like candy, how are they so healthy? But they are!" In the reel, Bulsiewicz continues, "They're super high in fiber. A cup of raspberries has about 7 g of fiber—that's like half of what the average American is getting per day." Bulsiewicz goes on to share more about the many health benefits of raspberries, including them being rich in nutrients like "vitamin C and polyphenol antioxidants … that are incredibly good for us," he adds. "Believe it or not, even though there's sugar in berries, berries have been shown to reduce our likelihood of developing [type 2] diabetes. And if you have [type 2] diabetes, they can help you to ultimately reverse it." Lastly, Bulsiewicz loves that raspberries are high in fiber and low in FODMAPs—fermentable oligosaccharides, disaccharides, monosaccharides and polyols. While many of these specific types of carbs are beneficial for people with healthy guts, they have been shown to exacerbate symptoms among those who have irritable bowel syndrome (IBS). "In other words, if you have digestive issues and are rebuilding your gut, you should be enjoying raspberries," concludes Bulsiewicz. Thankfully, there are many ways you can do just that. The doctor adores raspberry toasts, raspberry salads, raspberry spritzers and raspberry smoothies. Eating raspberries has several benefits, including adding to your fiber quota, promoting healthy digestion (even if you struggle with IBS), consuming more vitamins, minerals and polyphenols, and more. And we have other options for you. They include: Mornings are usually quiet. So, taking a few minutes to meditate lets you focus on yourself and start your day off right, says director of the neuroscience program at St. Michael's College in Colchester, Vermont. She suggests surrounding yourself with calming music and positioning yourself in a comfortable space. 'You have time, and you're doing your meditation, the things that make you happy,' she says. Getting sunlight exposure within 30 minutes to an hour of waking up can ignite your brain, Dr. Sevilla says. He suggests also incorporating probiotics, such as yogurt, kefir and fermented foods, which will support gut health—and also brain health. New research, co-authored by Dr. Yadav and published in Nature Scientific Reports, found that consuming probiotics restores balance to the gut microbiome and reduces inflammation in the body, including the brain. This could help activate your brain in the morning, and also potentially lower your risk for dementia later on. Mornings can be chaotic. You're probably trying to get yourself and everyone in your household ready, grabbing breakfast and checking your phone, while getting out the door on time. But Dr. Fabian-Fine advises taking it slowly to recharge yourself. Too much multitasking means 'we're overloading our brains constantly,' she says. It's linked to a long list of chronic health conditions like type 2 diabetes, cardiovascular disease, metabolic syndrome and cancer. Lifestyle habits like exercise, sleep and stress management can play a key role in the amount of visceral fat your body accumulates. So can the foods you eat, especially vegetables. While many vegetables can help protect against this stubborn belly fat, dietitians say the best one of all is spinach. Read on to find out what makes this leafy green so powerful, plus other simple tips to reduce troublesome visceral fat. Spinach is rich in powerful plant compounds called carotenoids, especially lutein and zeaxanthin. 'Carotenoid-rich vegetables like spinach can potentially reduce visceral fat by increasing fat oxidation and reducing inflammation,' says Molly Synder, RDN, LDN. For instance, one study found that people with the highest serum concentrations of carotenoids in their blood, including lutein and zeaxanthin, had less visceral fat than people with the lowest levels. 'Carotenoid-rich vegetables [like spinach] are high in fiber and water, which promote fullness, reduce calorie intake and improve cholesterol levels often linked to visceral fat,' says Diane Han, M.P.H., RDN. In fact, research has found that people who eat a fiber-rich diet carry less visceral fat than those who consume little fiber. And spinach is a tasty way to get it. One cup of cooked spinach provides 4 grams of fiber or 14% of the 28-gram Daily Value. People with obesity tend to have lower levels of carotenoids in their blood. However, research shows that higher carotenoid levels could help reduce their visceral and total body fat. For instance, one study found that when people's blood carotenoids rose, their body fat and waist circumference declined. While the exact reason isn't known for sure, carotenoids from foods like spinach may prevent the buildup of fat, including visceral fat. More research is needed to understand the exact mechanisms behind this process. But tossing some spinach into your salad or an omelet could be a tasty way to trim deep belly fat. 'Of course, carotenoids alone won't cause fat loss, but regularly including carotenoid-rich vegetables like spinach in meals, along with protein, fiber and healthy fats, supports a metabolic environment that can help reduce visceral fat over time,' says Anar Allidina, M.P.H., RDN. For even more visceral fat-reducing power, try these dietitian-approved strategies: Get Moving. Both resistance training and aerobic exercise may be beneficial for reducing visceral fat. Fortunately, you don't have to spend hours in the gym to reap their benefits. 'Even short daily walks after meals reduce belly fat and blood sugar spikes,' says Allidina. The most important thing is consistency to prevent muscle loss over time. Eat Enough Protein. 'Protein helps preserve lean muscle, supports metabolism and keeps you full,' says Allidina. The typical adult requires 0.36 grams of protein daily for each pound they weigh. For the biggest nutritional bang, eat a variety of protein-rich whole foods rather than supplements. And don't forget fiber-rich plant proteins like beans, tofu, edamame and lentils, which can benefit gut health and promote satiety. Manage Stress. Living a high-stress lifestyle without the tools to manage it can take a toll on your health and contribute to excess visceral fat. That's because stress increases cortisol, a hormone that promotes fat accumulation around the abdomen. Stress-management techniques that include mindfulness and relaxation may help keep cortisol in check. 'Try deep breathing, yoga, journaling, time in nature or anything else that helps you feel calm and present,' says Allidina. Limit Added Sugars. It's easy to eat too many added sugars, especially if you typically eat lots of highly processed foods or drink sugar-sweetened beverages. Trouble is, people who consume lots of added sugars tend to have more visceral fat than those who eat few added sugars. If you're wondering how much is too much, stick with the Dietary Guidelines for Americans recommendations of no more than 10% of total calories from added sugars. That's 50 grams of added sugars per day for someone who eats 2,000 calories daily. Visceral fat can spell trouble for your health in all sorts of ways. Fortunately, certain foods can help reduce visceral fat or prevent it from creeping up in the first place. And spinach is a great place to start. In fact, spinach is dietitians' favorite vegetable for reducing visceral fat. This nutritious leafy green is filled with carotenoids that may inhibit fat storage and fight visceral fat-promoting inflammation. It also provides fiber, which has been linked to lower visceral fat levels and helps keep you full and satisfied. Plus, spinach is super-versatile.
