How pizza omakase became a trend and where to try it

This article was produced by National Geographic Traveller (UK).
If you've ever looked at the menu in a pizzeria and been blinded by indecision, then pizza omakase might be for you – the food trend that gives you licence to sample a slice of everything.
Meaning 'I leave it up to you' in Japanese, omakase traditionally refers to the experience of sitting around a small sushi counter while the chef expertly crafts perfect sushi in front of you. Eschewing such workaday formalities as a menu, they hand you delicate slices of fish and rice with reverence, adapting what's served to your tastes and desires.
As a catch-all term for leaving your dinner decisions in the hands of the chef, omakase is an intimate, often high-end tasting menu experience that's taken off around the world extending far beyond sushi, incorporating the likes of desserts and foods cooked over fire. And omakase has now also embraced pizza, with a concept that largely offers a tasting menu of different slices, bookended by appetisers and desserts. Popping up everywhere from Japan to Costa Rica, pizza omakase is not about sitting respectfully at a counter, as is the way with its sushi forebears; the experience is often enjoyed by many people at once in a lively restaurant dining room.
One of its pioneers is Franco Pepe (star of Netflix's Chef's Table), at his Pepe in Grani pizzeria in the small hilltop town of Caiazzo, north of Naples. There are three pizza tasting menus available, which change seasonally apart from a few signatures, all beginning and concluding with fried pizza – savoury to start and sweet to finish. Just like traditional omakase, the mood and tastes of the customer are taken into consideration, assessed in real time by front of house staff and communicated back to the pizzaioli. 'The goal is to guide the customer through the entire experience, reaching the final course without ever feeling weighed down,' says Pepe. The idea for pizza tasting menus started to take shape around 2013, he says. He doesn't claim to be the concept's originator, although he notes 'if you ask ChatGPT it will tell you that I was the first.' That honour, he says, falls to friend and colleague Simone Padoan of Verona's I Tigli. 'In his case,' continues Pepe, 'the menu was made up of whole pizzas to be shared in slices. I chose a different approach, offering just one slice of each type of pizza.'
Pepe also hosts intimate omakase experiences at Authentica, 'the world's smallest pizzeria' set above the restaurant. Here, up to eight guests sit around a counter and eat selections of still-bubbling slices cooked by the man himself. 'If this has become a trend, I can't help but feel pleased' says Pepe. 'As it represents one of the most important experiences for the customer: the opportunity to experience the pizzaiolo's creativity.' Where to try pizza omakase 1. Pepe in Grani
Franco Pepe's pizzeria is a pilgrimage for foodies, who descend on the hill town of Caiazzo in the Campania countryside 25 miles north of Naples, to sample next-level pizza made with the finest local ingredients. Pepe's signature margherita sbagliata (margherita 'done wrong') is always on offer, topped with just mozzarella before being cooked, then dressed with tomato passata and green pesto. The fried pizza slices, meanwhile – dressed simply with a slice of tomato, anchovies and lemon zest – touch the divine. Amazingly, Pepe manages the rhythm of the menu in a way that leaves you full but not overwhelmed. Menus from €40 (£34). Another acclaimed Campania pizzaiolo, Francesco Capece is co-owner of Milan's Confine restaurant, where pizza is given a fine-dining treatment. Paired with wines, the tasting menu takes in different pizza styles including pan-baked padellino from Turin, and classic Neapolitan, served una sola fetta (as a single slice). It was recently named fourth-best pizzeria in the world by Italy's 50 Top Pizza ranking. Menus from €40 (£34). Launched in spring 2025, the by-the-slice pizza tasting menu at Seba's on Costa Rica's Pacific coast draws on a farm-to-table, open-fire ethos. Expect toppings including expertly grilled local beef, smoked fish and seasonal vegetables across varieties that range from classic Neapolitan and Romana to a New York-style large, foldable thin-crust slice. 50 Top Pizza named Seba's the best pizzeria in Costa Rica and also ranked it among the top 50 in Latin America. Multicultural influences and premium ingredients feature on the 11-course menu on monthly omakase nights at this Los Angeles venue. One for the more adventurous diners, Sei is led by chef-owner William Joo who plays with flavours that might result in the likes of a tom yum margherita with scallop pepperoni and a Baja fish taco pizza topped with sea urchin from Hokkaido, Japan. Menus from US$125 (£91). Pace yourself, as the meal kicks off with four starters and there is a selection of Italian desserts to finish. Photograph by Marc Fiorito 5. Tony's Pizza Napoletana
Thirteen-time World Pizza Champion Tony Gemignani doesn't hold back at his San Francisco pizzeria, where the offering is less dainty tasting menu, more full-on feast. Here, seven pizzas are served up whole, featuring styles from around the world and taking in the likes of an artichoke canotto ('dingy', the name referring to the pizza's shape, with a puffy raised crust) with mozzarella, artichoke, smoked provolone, spinach, garlic and lemon, along with Gemignani's award-winning signature margherita. Pace yourself, as the meal also kicks off with four starters and there is a selection of Italian desserts to finish. Menus cost $500 (£364) for up to six people. The pizza scene in the Japanese capital has rivalled the best in the world in recent years, so it makes sense that one of the leading pizza omakase experiences should be found here. Netflix just added a wild buddy-cop action-comedy movie — and it's already crashed the top 10

Netflix has just dropped a chaotic new action-comedy movie — and it's already climbing the streaming service's charts. The movie in question is "Almost Cops" (also known as "Bad Boa's"), a Dutch original flick about two mismatched community police officers who are thrown together and end up forming an unlikely dream team as they pursue an investigation on the streets of Rotterdam. Despite only dropping on Friday, July 11, "Almost Cops" has already managed to grab viewers' attention; within just a couple of days, it's climbed to the No. 4 spot in Netflix's top 10 movies list. If this movie has caught your eye, and you were weighing up whether to stream "Almost Cops" on Netflix, you can find more info (and my quick take on the new film) below. Gonzalo Fernández Carmona's "Almost Cops" introduces us to Ramon (Jandino Asporaat), a committed community officer who wants nothing more than to keep the streets of his Rotterdam neighbourhood clean and safe. He's partnered up with reckless ex-detective Jack (Werner Kolf) when the new arrival is temporarily demoted from CID to Ramon's team. The two have vastly different approaches to police work, and when they start working together, they discover they've got something in common: the loss of a murdered loved one, and they start to become an unlikely dynamic duo as they work to get to unmask the killer, unearthing criminal secrets in the process. Get instant access to breaking news, the hottest reviews, great deals and helpful tips. In addition to Asporaat and Kolf, "Almost Cops" also stars Mark Rietman, Florence Vos Weeda, Juliette van Ardenne, Ferdi Stofmeel, Teun Kuilboer, Daniël Kolf, Victoria Koblenko, Romana Vrede, Yannick Jozefzoon, Nazmiye Oral, Rian Gerritsen, Phi Nguyen, Richard Groenendijk, and Steef Cuijpers. Having streamed it myself, I'd offer what for some could be a pretty damning verdict: "Almost Cops" is a perfectly fine Netflix movie. If you're a 'Bad Boys' or 'Hot Fuzz' fan, or love a decent action-comedy, then there is daft fun to be had and some silly setpieces to enjoy It's silly, fast-paced stuff that got a couple laughs out of me, but it's not big, bold, or funny enough to measure up to the buddy-cop action comedies it's emulating. If you're a "Bad Boys" or "Hot Fuzz" fan, or love a decent action-comedy, then there is daft fun to be had and some silly setpieces to enjoy in "Almost Cops," but it's not something I think you should push to the top of your watchlist. If you've got a spare couple of hours to fill, you could stream "Almost Cops" on Netflix and not have a terrible time; it makes for serviceable — but unremarkable — viewing. Looking for a second opinion? Well, while "Almost Cops" hasn't earned a Rotten Tomatoes score just yet, there are some other reactions in the wild. In a 4-star "Almost Cops" review for What's on Netflix , Carlo van Remortel called the streamer's new action comedy a "fresh and surprisingly enjoyable addition to the ever-growing Dutch Netflix catalog", and argued it was "both laugh-out-loud ridiculous and unexpectedly touching." Ready Steady Cut's Jonathon Wilson, meanwhile, gave it a 2-star review and labelled the movie "a bitter disappointment", writing: "Everything here — from the writing to the performances to the action and comedy — is half-arsed in the extreme". And if that passable verdict has you second-guessing streaming Netflix's new Dutch comedy, we can help you find your next watch. You Know The 'Too Much' Cast from 'Hacks,' 'The White Lotus' And 'Game Of Thrones'

For those who have been rewatching Girls recently, Lena Dunham just dropped another new binge-worthy series. Netflix's Too Much—out now—follows Jessica (Megan Stalter), a young woman who moves from New York to London after experiencing a messy breakup. Across the pond, she meets and begins falling for a British musician named Felix (Will Sharpe). And like any Dunham project, the rest of the cast is stacked. 'I honestly can't believe it happened,' Dunham told Tudum about Too Much's all-star ensemble. 'There were so many actors that I respect that I was like, "Even if the character is in one episode or four episodes, I want to give them something to grab onto."' Below, get to know the main cast of Too Much. Megan Stalter (Hacks, Problemista) plays the lead character Jessica, a heartbroken young woman who relocates to London for a job after a bad breakup. There, she meets a charming musician named Felix (Will Sharpe). Will Sharpe (The White Lotus, A Real Pain) plays Felix, a British musician who meets Jessica after one of his performances at a local pub. Michael Zegen (The Marvelous Mrs. Maisel, The Penguin) plays Jessica's ex, Zev, who dumps her for an influencer. Emily Ratajkowski (Gone Girl, I Feel Pretty) plays Wendy, an influencer and Zev's new fiancée. Lena Dunham (Girls, Catherine Called Birdy) also stars in her series as Nora, Jessica's older sister, who recently separated from her husband. Andrew Rannells (GIRLS5EVA, Girls) plays Jameson, Nora's ex who left her to 'explore non-monogamy with a couple who are both named Cody'. He's also Jessica's boss who sends her to London on a work assignment. Rita Wilson (Asteroid City, Sleepless in Seattle) plays Lois, Jessica and Nora's mom. Rhea Perlman (Matilda, Barbie) plays Dottie, Jessica and Nora's grandmother. The whole family lives in her home in Great Neck, Long Island. Janicza Bravo (Zola, Sharp Stick) plays Kim, a creative director and Jessica's new co-worker. Watts plays Jessica's boss's wife, an extremely wealthy woman who she has a particularly exuberant interaction with at a dinner party... Kim's assistant and Jessica's Gen Z colleague. 'I'd seen a stand-up special of [Leo's],' says Dunham, 'and thought, "This is a kid genius."' One of three Pollys, but really, the main Polly. Polly is Felix's friend and former on-off lover/it's complicated. You'll recognise Exarchopoulos from breakout film Blue Is The Warmest Colour - she also voices Ennui in Inside Out 2. Scott, who you'll know from Fleabag, Sherlock Holmes and more plays a director that Jessica comes into contact with as part of a work assignment. Another of Jessica's colleagues, who has something on and off maybe going with Kim... you'll recognise her from The Alienist. The Game of Thrones star appears as Jessica's father in a series of important and emotional flashbacks. Auggie is Will's flatmate, friend and bandmate - you may remember him playing Martin Bashir in The Crown or in Patrick Melrose. Gaz is Jessica's neighbour and actually a sweet and caring presence in her life during her stay. He played Tommen Baratheon in Game Of Thrones. The A List actor (and Instagram favourite follow for me) Grant, plays Jessica's boss. Speaking about his casting, Dunham said: 'Richard E. Grant is this kind of incredible kind of British maximalism coupled with major pathos and physical comedy.' Juliana Ukiomogbe is the former Assistant Editor at ELLE. Her work has previously appeared in Interview, i-D, Teen Vogue, Nylon, and more.

Netflix confirms future of beloved romantic drama 'Virgin River' — and it's good news

Netflix recently confirmed that we won't be leaving "Virgin River" behind anytime soon, as the streaming service has renewed the popular romantic drama for an eighth season. The good news was shared on Tudum, where the streaming service also revealed that production on "Virgin River" season 7 had wrapped, with filming taking place in Vancouver (and Mexico) throughout the first half of 2025. "On behalf of myself and the whole "Virgin River" family," showrunner Patrick Sean Smith told Tudum. "We're eternally grateful for Netflix and to the fans for allowing us to continue on this journey with these beloved characters." It's perfectly-timed news too, as "Sullivan's Crossing" — another series based on the novels from Robyn Carr — is currently sitting pretty at the top of the streaming service's most-watched charts. Per the announcement, we know that "Virgin River" season 8 will run for 10 episodes, giving fans a total of 20 new episodes to look forward to from Netflix's longest-running original scripted series. And while we don't know much about the newly announced season 8, showrunner Smith has given us a brief tease of what's in store in the forthcoming seventh instalment. Get instant access to breaking news, the hottest reviews, great deals and helpful tips. Read More "Season 7 will find Mel [Alexandra Breckenridge] and Jack [Martin Henderson] taking their first steps into marriage as they start to plan for and build a life and family together. Meanwhile, Doc and Hope will work together to protect the clinic and the integrity of the town from outsiders." If you weren't already aware, "Virgin River" season 7 is also due to welcome two new faces to town, with Sara Canning ("The Vampire Diaries") joining as state medical board investigator (and ex-cop), Victoria. She's arrived to look into Doc's practice, but, as Netflix puts it, she "runs into a friend she wouldn't mind catching up with... or maybe even pursuing something more." The other new arrival is Cody Kearsley ("Riverdale"). He's playing Clay, an athletic tough guy with experience on the rodeo circuit. Clay grew up in foster care with his younger sister, whom he hasn't seen since he was a teen; he's been looking for her ever since. If you're looking for something to stream while you wait for the next season of "Virgin River," we can help.
