He's a native Chicagoan and has been with Eater since 2014. The team behind Lola's Taco Bar knows they're not reinventing the wheel. A fast-casual restaurant serving tacos and cocktails isn't new to metro Detroit. However, the four folks behind the new Grosse Pointe Woods restaurant, slated to open in September, have worked at big-time restaurants in Chicago, New York, and Philadelphia, accruing more than 100 years of experience, including time spent at Michelin-starred restaurants like Alinea in Chicago and Rebelle in New York. With all that talent, it shouldn't be surprising that they're serving a taco with rotisserie chicken. Branden McRill says his crew discovered a proprietary rotisserie system left in the kitchen by the previous tenant, Boston Market. It was chef Brandon Zarb's idea to offer up the special, along with warm tortillas, pickled veggies, and guacamole as a family combo. It's this type of thinking that will make Lola's stand apart from other taco spots in metro Detroit, McRill says. While the restaurant is primarily counter service, customers will get check-ins from staff, leaving open the option to add drinks or more food to a ticket while seated without engaging a QR code. 'We're going to use fresh-squeezed lime juice and good tequila,' McRill adds. 'We'll also make an affordable margarita.' Accessibility is a key ingredient for McRill. The plan is to open multiple locations serving al pastor tacos shaved from a trompo. Lola's will offer vegan and vegetarian options, and build-your-own bowls and burritos. They're still debating on what tortillas to use; McRill says they're leaning toward flour. Each of the four main team members brings a unique skillset, says McRill, a native of Grosse Point who has cooked around the country. He met his life partner, Mel Fuechtmann in 2012 while working at Pearl and Ash in New York City. Fuechtmann was also general manager at Rebelle. McRill and Zarb met while in Chicago, where they both worked with Paul Kahan's One Off Hospitality Group. Though they weren't colleagues, they knew each other. They became reacquainted through social media, with McRill scrolling his Instagram feed and looking at Zarb's food pictures. Zarb helped launch Chicago's influential Big Star taco bar, and was also a chef at Working Class Outlaws restaurants Public House, which closed earlier this year, and Imperial (the latter of which is also a cocktail and taco bar). Like Big Star, they'll offer a patio with room for 24. McRill says there'll be room for 50 inside. Design firm AvroKO is working on the project, collaborating with Tury Design. Finally, Niko Moschouris brings experience in scaling restaurants, opening several Subway locations. He's also a member of the board of directors at the Detroit Wing Co. and Beyond Juicery + Eatery. Top New York City restaurants are increasingly turning to collaborations with renowned chefs from around the globe to boost business and stand out from high-end rivals, Side Dish has learned. The collabs, while not a new phenomenon, have taken on added importance as President Trump's tariffs create challenges for chefs to source some of their favorite ingredients. They keep the restaurant interesting,' said Howard Chang, co-owner of Kuma Hospitality Group's l'abeille with partners Rahul Saito and executive chef Mitsunobu Nagae. The dinners these top chefs serve up at ticketed events aren't cheap. At a recent, prix-fixe collab dinner at l'abeille, Nagae worked with London-based chef Chet Sharma, who studied physics at Oxford and now helms the standout Indian-themed restaurant BiBi in London's swanky Mayfair neighborhood. The meal cost $325, with an additional $295 for wine pairings. The exclusive events, however, often don't bring in more money than regular a la carte dinners, restaurateurs told Side Dish. 'We started the Japan series in 2019,' said Hannah Wyatt, Sushi Noz's operations manager. 'Our goal was to showcase top chefs from Japan through collaborative dinners with chef Noz, with a focus on sushi and kaiseki chefs at the top of their respective fields.' In Williamsburg, Brooklyn, the owners of Layla's began bringing in chefs during COVID and continue to have pop-ups for 'brand exposure.' 7 The dinners these top chefs serve up at ticketed events aren't cheap. 'We did it once, and it was really successful and fun and now it's something we try to do as often as we can,' Samuel Lynch, one of Layla's co-owners along with Stefano D'Orsogna and David Lacey, told Side Dish. The trend has even extended to the Hamptons, where Mavericks Montauk will welcome the crew from Michelin-starred Parisian restaurant Contraste on July 31. 7 The upside, they say, is that global collabs raise the restaurants' profiles, bring in new diners and offer educational benefits for staff. We hear … that celeb chef Scott Conant is opening a posh new Italian restaurant, Leola, in the Bahamas at Baha Mar this fall. Leola will be on the casino level of Grand Hyatt Baha Mar, joining hotspots including Jon Batiste's Jazz Club, Marcus Samuelsson's Marcus at Baha Mar Fish + Chop House, Daniel Boulud's Cafe Boulud, and Dario Cecchini's Carna. The 8,800 square foot space comes with 106 seats in the main dining room and 130 seats outside. 'Bringing Leola to life at Baha Mar is something I've dreamed about for a long time,' Conant said. 'I've always been inspired by the beauty and spirit of the Bahamas, and it felt like the perfect place to create a restaurant that's both personal and inviting. With Leola, we're blending the kind of food and hospitality I love—warm, soulful, and rooted in connection.' Conant will also participate in the Fourth Annual Bahamas Culinary & Arts Festival, which runs from Oct. 22-26.
