6 Pickle Recipes For Summer - Popsicles, Cocktails, Cupcakes And More

Forbes3 days ago
From cocktails to cupcakes, folks have developed many pickle recipes to fuel the current pickle ... More craze.
July is National Pickle Month, and the timing could not be better as pickles have taken over the internet, with the #pickle hashtag accumulating nearly 10 billion hits on TikTok. Pickle recipes and retail products are popping everywhere, from pickle lemonade to instant noodles, snocones, and – yes – pickle cupcakes.
There are many pickle-flavored products already on the shelves, with more on the way. For instance, a limited-time Cup Noodles Dill Pickle flavor from Nissin is now available online and in-stores nationwide at Walmart, Albertsons and other retailers. Restaurant chains are taking notice, too. Shake Shack introduced fried pickles as a side, and Popeyes' went even further with a complete pickle-infused menu.
The national pickle craze became fully evident when Top Chef featured a 'Pickle Me This' episode, which included Bubbies naturally fermented dill pickles. It seems that the summer of pickles has fully arrived.
While pickle brine is praised for its hydrating properties thanks to its high content of electrolytes and sodium, naturally fermented pickles go a step further by providing healthy probiotics, too. So, when you enjoy a salty tangy treat this summer, you can feel better knowing that you are consuming something that is also good for you.
Pickle recipes are as simple as a homemade flavored snowcone: crush ice in a blender, pour cold pickle juice over the ice and garnish with a pickle. But if you want to get more creative, here are a few pickle recipes to get your mouth watering and your summer entertaining ideas on trend.
These colorful popsicles are made with different flavors of Olive My Pickle's live brines. Good and ... More good for you.
Pickle Popsicles
Olive My Pickle makes a line of fermented pickles, as well as LiveBrine probiotic pickle juice in various flavors which can be used in a wide variety of applications, such as these colorful pockle popsicles.
Pour your choice of LiveBrine Probiotic Pickle Juice into popsicle molds. For a sweeter popsicle, mix the LiveBrine with fruit juice or fruit puree. Add Kosher Dill Pickle coins or fruit slices, if desired. Freeze for at least 8 hours.
This recipe can be tailored by adding hot sauce, spices and even spirits like tequila or vodka. Bubbies Pickles are a wideley available brand of naturally fermented pickles which recently expanded to Whole Foods Market and H-E-B, and will introduce new products later this year.
Slice the dill pickles and add them to a blender or food processor. Add the brine, hot sauce, and spices. Blend until pickles are broken up, and the consistency of the mix is like a smoothie. Pour into popsicle molds and freeze for six hours or overnight.
* Adding a small amount of alcohol or sugar will soften the popsicles if you find them too hard.
This Sweet & Spicy Pickled Whiskey Sour is a fabulous summery take on the classic cocktail.
Pickled Cocktails
Adding pickle juice can balance the sweetness of cocktails, while the salinity can amplify other ingredients. You can also make a pickle spritz with just soda water and pickle juice over ice, with all the hydration benefits and none of the hangover. For an extra savory burst of pickle, rim your glases with Twang Pickle Salt.
Place all liquid ingredients in a cocktail shaker. Fill with ice and shake. Press lemon wedge around inside of a cocktail glass. Strain liquid into glass and garnish with lemon wedge.
Grillo's Pickles started in 2008 out of a wooden cart in downtown Boston. The cold and crunchy pickles quickly garnered a loyal following, and now boast a whole line of products available nationwide. Try them in this cool take of the classic G&T.
Fill a chilled glass with ice cubes. Add gin, tonic water, and Grillo's Italian Dill Chips pickle brine. Stir well. Garnish with Grillo's Italian Dill Chip, lemon wedge and dill from the pickle brine.
This tangy and crunchy salad is the perfect side for a summer picnic or backyard barbecue.
Dill Pickle Chickpea Salad
An excellent option for a refreshingly tangy side dish for any backyard barbecue, summer potluck, or as a quick and tasty weeknight dinner.
Mix diced veggies with chickpeas. Top with LiveBrine Pickle Juice and olive oil. Add dill, salt and pepper to taste, and toss well.
Use probiotic pickle juice to flavor an tenderize meats for the grill, such as these tangy, spicy ... More wings.
Pickle Brine Chicken Wings
Place wings into a resealable plastic bag. Add pickle brine and minced garlic and rub together. Refrigerate, laying flat, for 4-6 hours, then drain brine, remove wings and pat dry. Add oregano, smoked paprika, chicken rub seasoning and Cajun seasoning in a small bowl and combine thoroughly. Coat wings in olive oil and add dry rub spreading evenly on both sides.
Heat the grill to 425°F. Place wings on grill, close the lid and cook thoroughly, about 25-30 minutes, flipping every 5 minutes. These can also be made in the oven at the same temperature.
Pickle cupcakes? You bet. Sweet and tangy bread and butter pickles give these treats a unique and ... More delicious flavor.
Vegan Peanut Butter Pickle Cupcakes
You can also make these cupcakes non-vegan by substituting the vegan egg and dairy for real egg and dairy products.
Preheat your oven to 350 degrees F. Line your cupcake tray with liners or grease it thoroughly. Make your flax egg by combining the ground flax with the water and allowing it to sit for 5-10 minutes. Once the flax egg is gelatinous, cream together butter, brown sugar, flax egg, and vanilla.
Slowly add in flour, salt, and baking soda. Mix until combined. Add the almond milk and vegan sour cream, then mix until fully combined. Once the mixture is combined, add peanut butter and continue to mix until combined. Slowly add in Bubbies Bread + Butter Chips and gently fold them into the batter. Fill each cupcake liner with approx 2 tbsp of batter, or until each liner is 3/4 full.
Bake for 22-25 minutes, until you are able to insert a toothpick into the cupcake and cleanly remove it. Allow cupcakes to cool for 15 minutes before frosting. While the cupcakes are baking, begin to make the frosting.
Combine the vegan cream cheese, butter, and Bubbies Bread and Butter pickle juice and mix. Once it is well combined, slowly add in the confectionary sugar, 1/2 cup at a time. Continue to mix until frosting develops. Pipe frosting onto cooled cupcakes and garnish with a Bubbies Bread and Butter pickle. Store in an air-tight container in a cool area for up to five days.
Try these pickle recipes this summer and celebrate their myriad applications outside of eating them right out of the jar with the refrigerator door open.

Walmart's 4th of July sale rivals Prime Day with deals from $9— here's everything I'd shop now

With 4th of July sales already here and Prime Day just a few days away, there's double the reason to start shopping this holiday weekend. And while Amazon has been stealing the spotlight when it comes to flashy discounts, it's worth noting that Walmart is stepping up to the plate with its own set of impressive savings. One of the best Walmart 4th of July sales right now is Walmart Plus at 50% off. That means you'll pay just $49/year for all of the benefits of Walmart Plus like early access to Switch 2 restocks, free delivery, and fuel discounts. I recommend sticking with 4K resolution as the price difference isn't all that great. It's since been replaced by another model, but the Iniu 10000mAh Portable Charger is a previous winner on our list of the best power banks. Combining its compact size, 10,000 mAh battery capacity, and two USB-A ports, it's the affordable portable charger for anyone that needs on-the-go power. Wireless earbuds have come a long way, and now, you can get a solid-sounding pair of buds for under $25. Our Fujifilm Instax Pal review said this device is extremely easy to use, and we had plenty of praise for its portable design. While you'll need to tether it to the companion app on your phone, it's perfect for taking fun, retro-style pictures. I've got to recommend a TV when it's under $100, especially when it's 32-inch and comes from Walmart's very own Onn. range. It's a sturdy set with Roku Smart TV running the show, meaning you'll get access to a lot of streaming. So, if you're looking for a simple TV that'll let you watch your movies and shows in HD-quality, this one's at the breathtakingly cheap price of $88. The Hisense R6 series includes HDR support, 4K resolution, and Roku's excellent operating system. At its current sale price, it's a total steal. It features Dolby Vision/HDR 10 support, a low-lag gaming mode, and DTS Studio Sound. The TCL QM6K is the perfect deal for a display upgrade. It offers a VRR feature that can push the TV refresh rate to 288Hz and leverages Dolby Vision IQ for sophisticated HDR support. It's a great TV for gamers and comes in a wide range of sizes at incredible prices. We gave it an excellent 4-star rating in our TCL QM6K Mini-LED TV review. The Q70C is a budget Samsung option that sports some awesome features despite a lower price tag. It uses 4K upscaling for impeccable picture quality and a motion Xcelerator feature for 4K 120Hz visuals and buttery smooth gameplay. With both Quantum Dot and HDR, the Q70C comes equipped with lifelike color and contrast ratios, as well, so darker scenes are easier to experience. Some other new key features include 30% more screen area, rounded corners and a first-ever wide angle OLED display. The device also features advanced health insights, including the ability to take an ECG anytime. It's no longer Apple's flagship, but the MacBook Air M1 offers good performance and value. The M1 CPU never stuttered in our tests and also helped it reach over 14 hours of battery life. It features a 13.3-inch Retina display, Apple M1 CPU, 8GB of RAM and a 256GB SSD. In our MacBook Air M1 review, we said it offers amazing endurance and very good speed. While they're an older model, the Sony WF-C700N are still a great buy. Its anti-allergen HEPA filter is designed to tackle everything form smog and toxins to dust and dander, giving you healthier, purified indoor air quality. Sisters' Side Hustle Leads to Hundreds of Millions of Dollars

This Side Hustle Spotlight Q&A features Lee Mayer, co-founder with her sister Emily Motayed of interior design and home decorating company Havenly. Read more about how the Denver, Colorado-based entrepreneur turned a side project into a successful brand, here. Responses have been edited for length and clarity. Image Credit: Courtesy of Havenly. What was your day job or primary occupation when you started your side hustle? I was working in consulting, strategy and finance roles — sort of classic post-business-school roles. Often, the roles offered high compensation but were not particularly rewarding for me in other ways. Related: Tired of 'Culturally Obtuse' Products, This 27-Year-Old Took His Side Hustle From $1,000 a Month to 7-Figure Revenue: 'Pick the Right Opportunity to Pursue' When did you start your side hustle, and where did you find the inspiration for it? I'd just moved to Denver, Colorado, from New York City and suddenly found myself in a much larger home compared with my 700-square-foot NYC apartment. I wanted my home to feel like a reflection of me and my tastes, but the combination of working long hours and confronting the often inaccessible nature of traditional interior design really slowed me down. I started wondering why there wasn't a service that made designing your home more affordable and fun, so we started an online design service that used technology to make it possible to design anyone's home delightfully and accessibly. Somewhere along the way, we grew a lot, and we started to buy other online home furnishings businesses, often started by other folks who had also left highly paid jobs to start their own online companies selling furniture to consumers. We now own six consumer-facing furnishings or design brands: Havenly, Interior Define, Burrow, Citizenry, The Inside and St. Frank. Image Credit: Courtesy of Havenly What were some of the first steps you took to get your business off the ground? My sister and I started talking with our friends, family and connections, calibrating our idea based on hundreds of conversations, and conducted a survey that gathered insights from nearly 1,000 people. Related: 'Immediately Profitable': Former Lululemon Executives Turned Their 'Side Project' Into an 8-Figure Brand Worn By Olympians — and You'll Probably See It This Summer If you could go back in your business journey and change one process or approach to save you time, energy, or just a headache, what would it be, and how do you wish you'd done it differently? In the beginning, you should be moving the needle in huge ways, not incrementally. When you start a business, you may tend to think process first, instead of outcome first. You develop all of these checklist items because those things are knowable or countable, but the big things are often a lot more amorphous. For example, it's hard to figure out the exclusive product market fit, so instead, you'll worry about your legal structure, which is far more "knowable." It can also be putting in a lot of process for your engineering/customer service or other team without having a single scaled customer. These things are easy to do, particularly because they're internally controlled, and it'll eventually become important, but it doesn't actually move the needle in the big ways you need to when you're first starting. You'll end up exhausting yourself with things that don't ultimately matter at that point. When it comes to this specific business, what is something you've found particularly challenging and/or surprising that people who get into this type of work should be prepared for, but likely aren't? I don't think it's surprising, but it's a lot more work than most people think it is, and it's not always glamorous work either. Sometimes you get lucky and find a business that is an overnight success, but usually it can mean long hours for many years. It requires a lot of intestinal fortitude to do that much work without a certain outcome. To complicate matters, it's work at all levels. You're the one answering customer service at 2 a.m. and figuring out insurance for your employees, all while coding the website. The financial strain can also be real. In many cases, you may be stepping away from a meaningful career in a highly compensated position, and it may be years before you exit or even pay yourself a salary. What was your approach to funding? Did you use any specific strategies that might help other founders successfully raise? First, don't take rejection personally. Some people raise very easily — they start a company in a hot space at the right time (like AI!), they're extremely well connected, or they get lucky. It's easy to think that if it doesn't go that easily for you, there's something wrong with you. It took about 140 rejections in our first fundraise before receiving that first yes, for what it's worth. For most successful people, there really aren't many instances in your life where you get rejected so many times, and it can take a toll on your confidence. But the reality is, the early stages of fundraising can be tough, and are often very affected by exogenous factors. The trick is to try to let rejections be nothing more than what they are, which is just one investor declining, for right now, the opportunity to invest. Related: Think You're Ready to Fundraise? Your Business Needs to Meet These 3 Milestones First. I recently re-entered the world of tennis after not having played for many years. I've found that just like fundraising, tennis is a mental game. No matter how the previous point went, you have to brush it off and focus on the current play. Just like in tennis, you have to try to brush the last meeting off, regardless of the outcome, and focus on the current pitch at hand. So, being able to stomach rejection can be a real advantage. You should also find a friend — find a CEO of a company that completed a similar-sized round within the past 12 months, ideally one that runs a company in an analogous but not competitive space. First, investors are never happier with a company than right after their initial investment, so their investors are a great place to start conversations, and they can connect you easily. Second, they'll know all of the active investors whom they talked to in their journey, even the ones who didn't invest, so they can tell you what they look for and help you improve your pitch. Finally, they're great sources of emotional support. Image Credit: Courtesy of Havenly What does growth and revenue look like now? We're in the multiple hundreds of millions. We're growing at a double-digit clip and are excited to continue to expand and serve more and more customers across all of our brands. What do you enjoy most about running this business? I've had the enormous privilege of working with incredibly talented people, many of whom have become friends over the years, and there's nothing quite like building towards a shared goal with people you trust and admire. Related: I've Interviewed Over 100 Entrepreneurs Who Started Businesses Worth $1 Million to $1 Billion or More. Here's Some of Their Best Advice. What is your best piece of specific, actionable business advice? There's a lot of noise in your day when you start a business, and it can feel overwhelming knowing the number of things you have to do between starting a business and whatever exit is. It gets worse once you let in other voices: well-meaning mentors who don't know the reality on the ground, employees who have never scaled a company from 0-1, investors who have never operated a company. Take feedback, process it a little, but then filter that through your own lens, which hopefully has some tether to data-based reality. Figure out the next most important thing to do, and don't spend too much time pondering all of the things that you need to do between now and exit, and all of the advice and ideas you get. Basically, just get to work — and keep putting one foot in front of the other in the general right direction. You'd be surprised how far you get. Philadelphia native turns viral "flying dress" photo shoot trend into movement of self-love

It's therapy wrapped in silk. A new viral trend is catching wind on the Philadelphia Museum of Art steps. Tanya Baird, a Northeast Philly native with a background in the fashion industry, is turning a viral flying dress photo shoot trend into a local movement of self-love, celebration and confidence. Baird's business is called Tanya's Traveling Flying Dress. She uses high-fashion gowns and iconic Philadelphia landmarks for her photo shoots, which help her clients reconnect with their confidence. Ricky Codio Photography Tanya's Traveling Flying Dress experience isn't just about the perfect Instagram shot. It's about helping women reconnect with their power and feel beautiful in their own skin. "This is not a typical photo shoot," Baird said. "This is a photo shoot that embraces freedom." Inspired by the flowing gowns featured in Santorini's famous photo shoots, Baird launched her business while on a soul-searching trip in Mexico. She wanted to bring that feeling of freedom home to Philly, along with the belief that beauty and empowerment should be accessible to every woman, at every stage of life. "It makes that woman take her power back and realize that what you're experiencing right now is being created within you," Baird said. CBS News Philadelphia Baird's photo shoots are designed to celebrate birthdays, sisterhood, anniversaries, or personal milestones. One client, Amanda Hill, a mother of three, says she has never felt better. "It's like bringing the sexy back, the beauty back," Hill said. "It's empowering for me." Baird's dreams of making her flying dress photo shoots a Philly must-do event. "Just like people visit the Betsy Ross House or the Liberty Bell, I want this to be something they do when they come to Philly," Baird said. "It's a celebration of feeling good in your skin."
