Food Picks: Nae:um chef's dream on a menu
SINGAPORE – South Korean chef Louis Han of one-Michelin-starred Nae:um in Telok Ayer dreams of running a small guesthouse some day, in the mountains near Seoul.
So, the 35-year-old has crafted his new menu around that dream. The restaurant presents its menu as a series of themed episodes and Episode Nine, called A Hanok Prelude, presents food he would serve at that guesthouse.
Judging by the food, guests lucky enough to stay at the guesthouse are in for a treat. The menu, priced at $228 a person for six courses or $268 for eight, celebrates produce now in season. This is a well-thought-through menu, but four courses stand out.
Tomato Dongchimi comes with tomato jelly, avocado cream, spring petals and greens, slices of velvety shima-aji or striped jack, and a dollop of caviar. Sure, the caviar is luxe, bu t it is the umami-filled tomato jelly that perks me up.
Chogye, chilled chicken broth spiked with vinegar and mustard, gets something of a makeover. Gone are the noodles, replaced with pan-seared ribbons of squash. Steamed organic chicken and squash blossom stuffed with chicken mousse take centre stage, and they are delicious with the broth; tart and refreshing with konbu vinegar.
I am also bowled over by the brown butter-doenjang sauce in the diamond trevally course. It makes a case for burning butter expertly. That butterscotch vibe tempers the savouriness of the fermented soya bean paste, and it is magic with the confit fish.
So Galbi, the main course of seared short rib, is a triumph. Extravagantly marbled beef is prized, but really, some of us value flavour and chew. This course has spades of it. The beef – marinated with dallae jang, which is made with soya sauce, wild chives that are in season in spring, sugar and sesame oil – is then grilled over binchotan. Served alongside, perfectly seared maitake mushrooms and kale.
Nae:um, which opened in 2021, will close for about eight weeks in early Jun e for renovations. Squeeze in a meal there before it reopens for a new season.

SINGAPORE – When Australian diver Cassiel Rousseau was 11, he was performing acrobatics of a very different kind, not in front of a diving crowd but a reality TV audience. He was the youngest member of an acrobatic troupe from Brisbane that made the 2012 grand final of reality show Australia's Got Talent and, as part of the act, he was catapulted from one side of the stage to the other. Today, Rousseau, 24, is a serious performer and a world champion. He proved his credentials on Aug 3, when he became a two-time 10m platform world champion at the 2025 World Aquatics Championships (WCH). The final day of diving saw the Australian clinch the gold medal with 534.80 points from six dives at the OCBC Aquatic Centre. Oleksii Sereda earned Ukraine's first medal of this meet, as he finished 19.60 points behind Rousseau to take the silver, while Randal Willars Valdez of Mexico won bronze with 511.95 points. When The Straits Times asked Rosseau if he ever thought his days as a circus act and TV talent would lead him to become the world's best in his diving discipline, he burst out in laughter. I have a great support team here.' Rousseau, whose first world title came in 2023, has not only beaten his opponents, but also overcome a fear of heights – by calming himself down before each dive. The gold medal on Aug 3 adds to the silver medal which he won alongside compatriot Maddison Keeney in the mixed 3m synchronised event on July 30. Rousseau said he was surprised by his latest win. 'I knew it was possible to get on the podium, but to become first again, I didn't really think there was really a chance, just because of how strong the event is,' said the Australian. 'So, yes, unexpected, but definitely, very grateful for being able to perform today.' While he has now won the world title twice, Rousseau has yet to bag an Olympic medal. His grandfather, French cyclist Michel Rousseau, won gold in the individual sprint at Melbourne 1956. But Rousseau, whose mother, moved from Paris to Australia, does not feel any pressure about winning medals. He said: 'I don't really care about that. My philosophy is that this is a hobby for me. If I'm not having fun, that's when I'm going to quit. Coming into this year, I've been having a lot more fun... and that is why I do the sport. Even if I didn't finish first today, that fun would have still carried across.' The silver medal, however, was priceless for Sereda, whose country has been devastated by Russia's invasion. Sereda, who trains in Kiev, said that multiple times during his training, the session would often have to be paused so that he can seek shelter. While a similar shutout was not possible this time around, Chinese divers were still named the best diving team on Aug 3, as they had been the most dominant, winning nine gold medals, three silvers and four bronzes from 13 events. Australia were second with two golds and a silver. China remain the standard-bearers of the sport, but there are signs that the 'outsiders' are not too far behind. On Aug 1, Mexican diver Osmar Olvera Ibarra ended China's near two-decade stranglehold on the men's 3m springboard with his maiden gold medal in the event preventing the diving powerhouse, represented by Cao Yuan and Wang Zongyuan, from making it 11 consecutive wins. Cao and Wang finished second and third respectively. On July 30, Chiara Pellacani and Matteo Santoro won Italy's first-ever mixed 3m synchronised title at the WCH and first WCH diving gold since 2015. On July 26, the first day of the diving events, Australia's Maddison Keeney won gold in the women's 1m springboard ahead of China's Li Yajie.

No plans to fully liberalise cross-border ride-hailing services between S'pore and Johor: LTA

SINGAPORE - Local authorities are open to ideas that can improve the commute between Singapore and Johor, but have no plans to fully liberalise cross-border ride-hailing services. In a statement on Aug 3, the Land Transport Agency (LTA) made this clarification following an Aug 1 meeting between Acting Transport Minister Jeffrey Siow and Johor state's chief minister Onn Hafiz Ghazi. A cross-border ride-hailing service was among several proposals discussed during the meeting, said Mr Onn Hafiz in an Aug 1 Facebook post. On Aug 3, Mr Siow said in his own Facebook post that the two ministers had discussed many issues. They included cross-border transport, as well as the importance of safeguarding the interests of drivers and platform workers and how LTA has been enhancing enforcement against illegal passenger and delivery services. Following the ministers' meeting, some Malaysian media had reported that Singapore and Johor had proposed introducing cross-border ride hailing services as an alternative transport option for commuters. LTA said in its statement that while ride-hailing was discussed at the meeting, no decision was made. The authority noted that there is an existing Cross Border Taxi Scheme (CBTS), which allows a licensed fleet of up to 200 taxis from each country to ferry passengers to and fro. Top stories Swipe. 'Today, the existing quota of the CBTS is not fully utilised,' said LTA. 'In view of commuter demand for more convenient cross-border travel, we will encourage full take up of the quota of licensed taxis.' The authorities are considering increasing the number of boarding and alighting points in each other's country, and for the use of ride-hailing apps to book cross-border trips on licensed taxis, said LTA. 'In any adjustment to our cross-border point-to-point transport regime, our key priorities are to better meet commuter demand while safeguarding the interests of our taxi and private hire drivers,' it added. In his Aug 1 Facebook post, Mr Onn Hafiz had said that allowing ride-hailing as a cross-border transport option could potentially reduce congestion, while opening up income opportunities for Malaysian drivers. 'It could also serve as a catalyst for a more user-friendly, safe and competitive transport system, while strengthening integration between both countries' public transport networks,' he said in remarks carried in Malaysian reports. Separately, LTA and Singapore bus operators are also reviewing a request from Malaysia's Land Public Transport Agency to start operating cross-border bus services from Johor Bahru an hour earlier , at 4am instead of 5am. In its Aug 3 statement, LTA said it is assessing whether the operating times of these services can be adjusted to help address bus crowding in the early mornings. 'A key consideration is that the first buses should match the starting time of our local bus and MRT services when they arrive in Singapore,' said the authority. SBS Transit currently operates services 160 from Johor Bahru Checkpoint, with departures starting at 5am on weekdays and 5.50am on weekends or public holidays. It also runs service 170 between Larkin Terminal in Johor Bahru and Queen Street Terminal near Jalan Besar, with departures starting from 5.20am on weekdays and 5.30am on weekends or public holidays. SMRT operates service 950 across the Causeway from Johor Bahru Checkpoint towards the Woodlands Temporary Bus Interchange. No information on the starting times for its Singapore-bound service is publicly available, but the Johor Bahru-bound service departs from Woodlands at 5.30am every day. Besides SBS Transit and SMRT, some private bus operators also offer cross-border bus services. LTA said it is 'exploring with cross-border bus operators the possibility of bringing forward the bus start times slightly, as well as engaging private bus operators on their interest to operate earlier services at higher fares'.
