June is here, and with the mid-year mark comes a fresh crop of new restaurants in Singapore waiting to be explored. From rooftop Italian dining inspired by coastal lighthouses to sizzling chicken offcuts that'll change the way you think about Korean barbecue, you'll want to make space on your calendar – and in your belly. This June, you can sip on aperitivo by the sea at 1-Alfaro, dive into bold Latin American flavours at Cudo, and join the hype train at Tokyo's cult-favourite Pizza Studio Tamaki. There's also something for noodle lovers – Kyo Komachi brings regional Japanese udon specialties to Vivo City – and a whole new take on KBBQ at Korea's Song Gye Ok. Here are the hottest new tables in Singapore to book right now.

1. 1-Alfaro
A brand new lifestyle destination by 1-Group, the folks behind well-known concepts like Wildseed, Atico Lounge, and Botanico @ The Summerhouse, launches this month. 1-Alfaro takes inspiration from the lighthouses of Emilia-Romagna in Italy, and fittingly, this new spot is perched on the rooftop of Labrador Tower, overlooking the sea. Dig into classic Italian plates and sip on aperitivo – the restaurant La Torre and bar La Luna at 1-Alfaro are run by the same team behind Monti, so you know they mean business. Feast on a spread of handmade tagliatelle ($28) and pinwheel pasta ($22), grilled meats ranging from Australian ribeye ($148) to Iberico tomahawk ($78), and then mosey over to La Luna for sundowners, whether it's wines (from $12), cocktails (from $16), or sharing jugs ($40) that you fancy. Once the sun sets, the mood turns electric with a live DJ spinning till late.

2. Song Gye Ok
Think Korean barbecue and you'll most likely picture thick strips of samgyeopsal (pork belly) or slabs of galbi (beef ribs) over the grill instead of chicken. But prepare to have your perception changed after June 5, because Korea's famed grilled chicken restaurant Song Gye Ok is opening its doors in Singapore. The chain commands hour-long queues in Seoul – and mind you, these hungry patrons are usually locals, not tourists. Head down to Telok Ayer to sample Song Gye Ok's assorted grilled chicken platter ($98), featuring six chicken cuts including rare bits like chicken neck fillets, gizzards, hearts, and chicken breast softbone. It's a medley of textures and flavours that highlight the oft-overlooked parts of the chicken that can be just as delicious as the thighs, wings, or drumlets. On top of that, you'll also find Modu 's samgyetang on the menu – in particular the perilla seed, collagen, and spicy hangover soups.

3. Pizza Studio Tamaki
The pizza fever in this city never dies, and Tokyo's Pizza Studio Tamaki is here to prove it with its legendary Tokyo-Neapolitan slices. This popular pizzeria from Roppongi officially opens to the public on June 10, taking over a unit in Duxton where the cocktail bar Tippling Club used to be. Maybe it's because of its celebrity-endorsed status (both Justin Bieber and Jeff Bezos have dined here) or its stamps of approval from Michelin and 50 Top Pizza, but we hear PST has already racked up some 2,000 reservations in its opening month alone. What sets the pizzeria apart is its dough, lightly fermented for 30 hours for a softer, fluffier texture, which is almost mochi-like in the way it pulls apart. The peel is also dusted with a fine layer of salt before the pizzas are slid on and fired up in the oven, adding a subtle savoury touch to each bite.

4. Cudo
The people behind Siri House and Mediterranean restaurant Moxie bring us Cudo, a new Latin American restaurant at Stanley Street. Executive Chef Steven Chou spent years travelling around New York, New Jersey, Mexico City, and Cancún, so everything at Cudo is tinged with the same punchy flavours and soul. A popular pick here is the lunchtime exclusive Cubano – sandwich stuffed with pork jowl, belly, Emmental cheese, and pickles – which is part of a reasonably priced $28 lunch set. But if you're dropping by for dinner, you'll get to try Chef Steven's Disco Fries ($16) – golden fries baked with Cotija cheese, beef gravy, chorizo, and salsa; and the squid ink pasta ($36) with lobster bisque cream and grilled tiger prawns. Stay for desserts like the tres leches ($14) with milk-soaked sponge and coconut cream, or the toffee plantain ($15) topped with vanilla ice cream.

5. Kyo Komachi
Remember when Himokawa udon (wide, flat noodles from Gunma, Japan) took the internet by storm early last year? Now, Umai in Guoco Midtown won't be the only place you can visit to try this unique dish – you can also check out Kyo Komachi in VivoCity, an udon-specialty restaurant highlighting the many versions of udon across the different regions in Japan. All the noodles here are handmade with Unryu wheat flour, imported from Japan. The signature Himokawa udon set ($14.90) comes with two sauces – pick curry for a richer flavour, sesame sauce, or the classic shoyu if you prefer something lighter. While you're here, sample the other udon dishes, including comforting, bubbling pots of Nabeyaki hot pot (from $16.90); white curry udon (from $12.90) from Ebisu, Tokyo; or fusion maze-udon (dry noodles, from $16.90) with toppings like ebi chilli, tom yum, or basil.

This year has seen the supervillains of the sea undergo a long over-due rebrand. The sharks of the world have been on the phone with a top crisis PR firm and, 50 years after Jaws did the dirty on the whole species with two ominous musical notes, it's finally paying off. Not only are experts putting their heads above the parapet (or sea level, if you will) to say sharks are not as evil and carnivorous as we once thought, but ITV producers have chucked a group of celebrities into shark infested waters to prove it too. Andrew Martin, a University of Colorado Boulder professor of ecology and evolutionary biology, has been studying the reputation trajectory of sharks for many years. ' Jaws was a terrible thing for sharks and a terrible thing for biology,' he laments. 'I think it scared people away from the ocean, which was a bummer, and I know Peter Benchley, author of Jaws , has come around and realised his mistake.' 'Encounters between humans and great whites are usually with surfers,' Martin added, 'who look like seals from below. It's really rare for a shark to go after someone.' Perhaps he's right after all. There is a lot to be scared of in the sea, not least the dark, inconceivable depths of the water itself, but for decades sharks have been bearing the brunt of all our fears. They are – as horror films like Jaws and soft-core lifeguard porn like Baywatch attest in equal measure – public enemy number one. So afraid of sharks were some children (me) that they were sometimes too scared to even have a bath. If that's not the work of an epic, multi-generational smear campaign, I'm not sure what is. But is it really fair? Is it justified ? That's what Lenny Henry, Ross Noble, Lucy Punch, Dougie Poynter, Ade Adepitan, Rachel Riley and Helen George were sent to 'the shark capital of the world', aka the Bahamas, to find out in Shark! Celebrity Infested Waters . Naturally, each celebrity has a fear of sharks, albeit to varying extents, but what unites them is their desire to conquer that fear. And the results will astound you. As a review of the new ITV show in The Guardian reads: 'Ultimately, the sharks upstage the celebrities. [...] This is a nature documentary by stealth, and a plea for respect for these ancient fish.' It even features an ex-military Australian man called Paul who lost a leg AND a hand in a shark attack (slightly risky PR move from team shark), but has chosen to dedicate his life to their conservation. If Paul can give these (mostly) gentle giants a second chance, shouldn't we? It turns out sharks are not the villains of the sea at all, but perhaps their greatest divas – iconic, unapologetic and willingly misunderstood by all of us. As we finally open our eyes to the wonders of sharks, let us end with a quote from the guy who laid the groundwork for this impressive 180° back in 2004 – Lenny from Shark Tale : 'I'll never be the shark you want me to be.' Wales' best hotel opens new pub where you can stay overnight and have your food cooked by an expert chef'

A new addition to the swish Palé estate, The Bryntirion Inn recently opened its doors at the gates of the five-star Palé Hall Hotel in Bala after a £1 million glow-up to inject a fresh feel while retaining its historic decor and vibe. Once a rustic village pub dating back to 1695, The Bryntirion promises a cosy stay where 'motoring heritage meets modern Welsh hospitality.' Owners Anthony and Donna Cooper-Barney have revamped the historic inn, creating a modern gastropub with rooms on the doorstep of the Eryri National Park. The pair also manage Palé Hall, which we recently ranked as top in our list of the best hotels in Wales. Our travel writer, Portia commends the Hall for "substance beneath the flair" and how the rooms "exuded understated elegance, perfectly complementing the panoramic views of the Dee Valley and its theatrically scenic surroundings." Plans are underway to add a spa and a second restaurant and potentially expand the historic hotel's number of bedrooms. They have also invested £200,000 to create exquisite Welsh art galleries. It shouldn't be a surprise, then, if The Bryntirion takes a leaf out of its sister venue's book. This latest village pub project is close to Anthony's heart. "We are thrilled to introduce The Bryntirion Inn as the latest part of the Palé Hall Estate." He adds that the new venture is "the perfect place to share my classic car collection, while creating a true village pub where locals can feel at home. The Bryntirion is about genuine hospitality, great food, and celebrating everything that makes this part of Wales so special." Forget five-star fuss. This is a proper village-style pub with sixty-cover dining room, good-looking bedrooms, and enough classic car memorabilia to keep the petrolheads happy. Decor-wise, despite the expensive revamp, there's still plenty of charm, with original stone walls, low timber beams, a roaring fireplace, and a bar stocked with real Welsh ales on tap and local spirits. While the bar remains a familiar spot for Bala regulars, the dining room has a more polished but still inviting feel and a creative menu shaped by the bountiful landscape around it. At the helm in the kitchen is Head Chef Tristan Fitt. His impressive CV includes heavyweights like Raymond Blanc's Le Manoir aux Quat'Saisons, The Westbury in Mayfair and Wheeler's Oyster Bar in Whitstable. In these historic surroundings, Chef Tristan is crafting a solid menu rooted in local produce. Vegetables come from Ty Uchaf Farm just down the road, and eggs are collected from Caepant Eggs in nearby Llandderfel. Respected Bala butcher TJ Roberts supplies the pub's meat, including 28-day-aged Black Angus ribeye and pork chops destined for the grill. The result is a collection of elevated pub classics that feel honest and generous, with no unnecessary frills. The à la carte menu is seasonal and expressive. One dish pairs a delicate chicken liver parfait with plum gel, lemongrass and Japanese Umeboshi plums. There's a proper chicken pie made with baby vegetables, pomme purée infused with garlic and herbs, and a rich tarragon sauce that's hard to leave unfinished. Desserts include an elegant tiramisu in Opera cake form, complete with espresso ice cream and a Tia Maria gel. For something nostalgic, the Bryn Strawberry Trifle layers vanilla custard with sponge and sherry-soaked fruit and is beautifully plated. Sunday lunch here is already drawing a loyal following, and it's easy to see why. Plates arrive piled with crisp roast potatoes, cauliflower cheese, Yorkshire puddings and seasonal vegetables. You can choose crispy pork belly served with apple, sage, and a pig in blanket or roast sirloin of Welsh beef with horseradish. For plant-based diners, there's also a nut roast pie that stands up to the meaty mains. The drinks list is worth lingering over. All of the beers, ciders and house spirits come from Welsh producers, handpicked with help from Stori, Bala's brilliant independent bottle shop and tap room. There's a thoughtful selection of low and no-alcohol options too. Overseeing the wine list is Palé Hall's Head Sommelier Garry Clark, who's balanced, reliable favourites with lesser-known pours, including some Welsh wines chosen to complement the food. Word is spreading fast, with early diners already singing its praises online. One TripAdvisor review wrote, "We were not expecting to find such amazing food in a little country pub ten minutes from our holiday cottage." Another posted, "Fantastic service, the tastes are sensational, and they welcome dogs as well as humans." Roasts are also a big hit, with one reviewer claiming, "His was the best Sunday lunch I've ever eaten." Staying the night? Upstairs, The Bryntirion has six rooms for overnight guests. Each is named after a Welsh mountain and features dramatic landscape photography of its namesake. The ambience is warm and simple, with wooden furniture, neutral tones, and thick, comfortable beds. Every room has a flat-screen TV, tea and coffee-making kit, and Penhaligon toiletries. Breakfast is served as a continental-style hamper delivered to your door, and there's a spacious family room available. Dogs are welcome, too, not just in the bedrooms but also in the bar and restaurant, making it a great choice for walkers, road trippers, and families travelling with their beloved pet. What's nearby Prominently positioned on the edge of Eryri National Park, the Bryntirion offers a relaxed base for walking, hiking, climbing, cycling, fishing, and water sports on Bala Lake.
