Sweet, juicy, and bursting with sunshine, mangoes are the undisputed stars of summer. Whether you love them ripe and luscious or paired with unexpected flavours, this delightful summer fruit can transform any dish into a seasonal celebration. Chef Meghna Kamdar and Chef Gopalasamy S have come together to share three vibrant and nutrient-rich treats that blend juicy mangoes with nuts, making every bite irresistibly cool and indulgent.
Pista and Mango Sabudana Kheer by Chef Meghna Kamdar (on behalf of American Pistachio Growers)
Ingredients:
Milk – 1 litre
Cardamom Powder – 4-5 pinches
Sabudana – ½ cup soaked (soaked for 4–5 hours)
Pistachio – ½ cup
Mangoes – 2, chopped
Method:
Almond Mango Cake with Mango Cheese Cream by Chef Gopalasamy S
Ingredients:
For the Cake
For the Cheese Base
Cream the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Fold in the almond powder, then add the vanilla essence and mango purée.
Pour the mixture into a mould and bake at 180°C for 15 to 20 minutes.
Once baked, allow the cake to cool to room temperature.
In a separate bowl, mix cream cheese, mango purée, and whipped cream until a thick cream forms.
Pipe the cream mixture onto the cooled cake.
Top with Alphonso mango chunks and serve.
Summer Chilli Mango Brownie Pudding by Chef Gopalasamy S
Ingredients:
Method:
Take fresh, well-ripened mangoes and extract the pulp. Mix the pulp with sugar and let it chill in the refrigerator.
Dissolve agar agar in a little water and fold it into the mango purée.
Pour the mixture into serving glasses and set them in the refrigerator to chill.
Cut homemade brownies into cubes.
Once the mango layer is set, remove the glasses and add brownie cubes to one side. Place the glasses back in the refrigerator to firm up further.
Cut the mango into small cubes and arrange them on top of the glasses. Serve chilled.

Matcha just walked into Indian kitchens — and got a full desi makeover. The vibrant green tea from Japan has taken over social media and found its way into cafes and homes alike. Everyone seems to be sipping, whisking, and experimenting with matcha this summer. And now, India is putting its own spin on this centuries-old tea. Matcha malai parfait and matcha mishti doi On Instagram alone, videos tagged #matcharasmalai or #matchadessert have seen a spike this summer, as Indian creators give the Japanese green tea a full-blown desi remix. Think rabri, mishti doi, and so much more. Take, for instance, chef Vinay Trilokiya's Gurugram restaurant, Congo, which offers a gulkand tukda matcha rabri for dessert. 'I was drawn to matcha for its earthy bitterness, vibrant colour, and health-forward profile,' Vinay says, adding, 'I wanted to balance its distinct flavour with Indian ingredients. The result was a matcha-infused rabri — silky, lightly sweetened, and perfectly paired with crisp tukdas filled with fragrant gulkand.' Arshya Aggarwal, founder of Nihira Sweets, is also going to introduce a matcha barfi and mango matcha rabri in the menu. 'With the global rise of matcha, we saw an opportunity to reimagine the traditional Indian sweets with matcha barfi and mango matcha rabri. The matcha barfi blends Japanese ceremonial-grade matcha with slow-cooked khoya. And the idea behind the mango matcha rabri was to create a layered flavour story. We combined the sweetness of Alphonso mangoes with the umami depth of matcha and crafted a dessert that feels familiar yet intriguing,' she says. US-based content creator Vidhi Dwipam Katariya's recent video of a matcha rasmalai also piqued much interest. 'As a non-coffee drinker, I longed for a comforting alternative. That's when the idea to fuse my favourite sweet, rasmalai, with the earthy flavour of matcha was born. It was a blend of tradition and comfort that felt like home in a cup,' she says. Taking things to the next level is chef Nishant Choubey, who has been experimenting with the likes of matcha dalgona lassi, matcha rabri malpua and matcha tulsi shikanji. 'These dishes I created were a hit both at the table and on social media. One of my favourites is the Matcha-Wasabi Mushroom Pakora with watermelon,' he tells us. He also leaves a tip for home chefs who might want to put an Indian twist to their favourite tea: 'Don't let matcha drown in the spice storm of Indian cuisine. Let it breathe and it will surprise you.' For chef Reetu Uday Kugaji, the inclination to incorporate matcha into Indian dishes goes beyond the health benefits. 'It's fascinating to see how a centuries-old Japanese tea has found its way into Indian kitchens with such creativity. I'm incorporating it for its health benefits but also reimagining it through the lens of Indian culinary heritage,' she explains. 'Think matcha rasmalai, matcha rabri, or even matcha peda; each dish tells a story of cross-cultural fusion, where traditional Indian textures meet the earthiness of matcha,' she notes. 'Matcha works amazingly with dairy, lentils, yoghurt, curds and rice-based dishes,' she adds. If you're looking to add a bright green twist to your favourites, chef Reetu suggests starting with familiar textures such as kulfi, sandesh, shrikhand, malai toast — even dhokla and khichdi.

As monsoon clouds begin to hover over the capital, summer is slowly retreating. Despite the scorch of the past few weeks, there's one thing Delhiites still await with childlike anticipation: mangoes. From Alphonso and Banginapalli (Safeda) to blushing Raspuri, mangoes arrive across India like edible postcards of summer. But beyond fragrance and flavour, mango season tugs at childhood memories — of climbing trees and grandparents waiting with plates full of mango slices dipped in salt, chilli, and oil. To celebrate this nostalgia, Delhi-based Kashkol Collective's Bazm-e-Aam at IIC, offered an evening of poetry, dastangoi, music, and a mango feast curated by chef and author Sadaf Hussain. 'Everyone has a childhood memory with mango,' says Hussain. For him, summers meant endless mangoes at his grandparents' home in Sasaram, Bihar. He recalls eating mango mixed with rice and dal — a combo that reminded him of Thailand's mango sticky rice, 'but desi-style, though I didn't love it,' he laughs.

There's nothing like biting into a ripe, juicy mango, eating away its golden-yellow flesh, and scraping off every last bit of the fruit from the seed with our teeth, until only a pale white seed remains. For Chennaiites, this is religious, as every summer brings a vibrant parade of mangoes into the city's fruit stalls — from the sweet Imam Pasand, to the tangy Banganapalli, and the fragrant Alphonso. Every variety has its moment of glory, piled high on vendor carts, drawing customers like bees. But as June prepares to draw to an end and the south-west monsoon treats us with occasional rainfall, the once-abundant displays begin to shrink. The prices of mangoes creep up, and our favourite varieties start disappearing one after another, reminding us that the season is slipping away. But what if we told you that you don't have to part with mangoes in sorrow this season? What if, instead, you could celebrate the fruit in all its glory — served fresh and cold in cocktails, stirred into savouries, and folded into desserts? Chef, food historian, and MasterChef India (Tamil) judge Rakesh Raghunathan along with Wild Garden Café, Amethyst, Chennai, are presenting Amra — a mango festival — between June 20 and 30; ready to give the fruit the send-off it deserves.
