William Sitwell reviews Starling, Esher: ‘A spick and span menu that's a pleasure to navigate'

There are, in my experience, three types of starling. The first is the
Turned out his name was Christopher Starling and when he wasn't tweeting he wrote, endlessly and left-handed, his wrist arching awkwardly over the page as the words came out feverishly, almost machine-like, buzzing and whirring across the paper. He's now called Boris and is a prolific author. Then there's a restaurant in Esher, a new and rather wonderful Starling.

It's a clever location, close to
At the helm is Nick Beardshaw, who was the chef and restaurateur at
Great British Menu
in 2023. Indeed his menu features a couple of 'as seen on TV' dishes. Among the starters is 'A Moon Shaped Pool', and 'Balloon Girl' is one of three desserts. These clunky names typify the plates served on the programme, needing a heavy tome of explanation and looking inedible, so I ducked them as I do the TV when I hear that plodding, swamp-like music.
Otherwise the menu is spick and span and a pleasure to navigate. Its spirit matches the decor, a nicely conventional layout of open kitchen, with a bar offering two seats for walk-ins, and some 40 covers with sensible padded chairs, a sweeping, dark blue banquette and, along one wall, a long, panelled mural of birds above the clouds.

This was a wonderful start and the joy soothed my pal Simon who was telling me about the photography studio on wheels he had commissioned. 'Oh, like a shepherd's hut,' I said. 'It is not a shepherd's hut. It's a photographer's studio,' he said. 'But it looks like a shepherd's hut,' I said. 'No, it doesn't,' he replied. 'It looks like a photographer's studio.'
My starter of pig's head was crisp and delicious but nothing to his quite glorious, rich and tasty pressed game. I decree that all terrines be like this – a celebration of rich, seasonal game and not one bit like dog food, which they so often are.
Mains were equally fab: on-point cooked pork and quite the most perfect piece of cod. Puds were a conventional and excellent crème brûlée, and chocolate ice cream covered in hazelnuts and tempered with a drizzle of olive oil.
For a fine bite and great service in Surrey, Starling is your nicely feathered nest.

Current owners Michael and Carla wrote in a statement: 'After an incredible run since 2013, we've made the decision to close the doors of 64 Degrees this summer. 'Over the years we've had the privilege of feeding thousands of you, celebrating countless birthdays, big nights, quiet dinners, and everything in between." They linked the closure to struggles being experienced in the food industry: "The cost of living crisis, rising supplier prices, energy hikes and the ongoing pressures on hospitality have mde it harder than ever for us an independent restaurant, to continue to bring the things we're most passionate about." Among those values, Michael and Carla outline are their high standards, locally sourced, fresh and sustainable ingredients, whilst investing in staff to bring the best service. Michael opened the restaurant to provide a focus on social dining, where people could order several small plates to share. At 64 Degrees, diners were encouraged to sit at the pass and watch the food being prepared in front of them. It received a number of accolades, including Best Restaurant in the Brighton and Hove Food and Drink Awards in 2014 and 2015, as well as Michael being acknowledged with their Special Recognition Award in 2016. In 2016 and 2016, 64 Degrees was also voted the Best Restaurant in the Brighton Top 20 Awards, in which Michael also won Best Chef for these y ears. The restaurant has continually been voted in the National Restaurant Awards Top 100 List each year, reach the height of number 16 in 2016. In 2017, 64 Degrees was then voted by the public of Brighton as the best restaurant for the BRAVO awards. The social media post continued: "We're incredibly proud of everything 64 Degrees has achieved and everything it has stood for! "From earning national recognition, to pioneering an 'open kitchen style' in Brighton, to the weird and wonderful dishes that made it onto 'the pass' it's been an adventure we'll never forget." They concluded: "This might be the end of 64 Degrees in its current form, but it's not the end of the story. "Something new is on the way, and we can't wait to share it with you soon." 64 Degrees is not the only restaurant Michael has opened, as following his success he opened another called Murmur in the summer of 2017. Murmur is also located in Brighton, on the seafront in Kings Road Arches. It offers a different dining concept, and served fresh, local dishes for lunch and dinner. 6 6

On who he's got his sights set on, Boris added: "I'm super attracted to Shakira, I think she's got a great personality and seems like a good girl.
