
A simple route to seafood sustainability? Eat way more of these four things
To put it plainly, there are three things you can do to help change our ocean's food systems: Diversify the seafood that you eat and cook. Eat more scallops, oysters, mussels and seaweed. Buy seafood that was farmed or caught in the United States.
In researching this topic for 'How to Cook the Finest Things in the Sea,' the cookbook I co-authored with chef Ari Kolender (of Found Oyster and Queen Street Raw Bar & Grill), I read peer-reviewed studies and talked to seaweed farming experts, a shellfish growing association, government agencies, award-winning authors, conservationists, journalists and chefs. Intelligent people disagreed on a great many topics, but the one thing they all agreed on was that we, as a country, are way too focused on eating the same few fish, over and over again.
'Americans have a very kind of brutalist approach to the foods they allow on their plates,' said Paul Greenberg, author of 'Four Fish: The Future of the Last Wild Food.' 'The idea came to me after repeatedly looking at menus and seeing this leitmotif of these same four fish. You're always going to have something that's pink and succulent — that's your salmon. You're always going to have some steak-y, or maybe sushi, that's gonna be your tuna. You'll have something white and flaky that's usually called cod but could be swapped in with a tilapia. Then there's always gonna be some kind of whole fish, for the adventuresome, and that's often called bass.
'You have [restaurants like] the Providences of the world that present interesting fish, but in the main world, and especially in fast-casual, it's almost always just salmon.'
The top three seafoods that we eat in this country are almost invariably, in some order: salmon, shrimp and canned tuna. When the vast majority of seafood consumption in our country is driven toward the same three sea creatures, businesses will find a way to meet demand, come hell or high water. Enough people diversifying the seafood they eat, and being open to 'plenty more fish in the sea,' would change our foodways.
While seafood experts often disagree about finned fish farming, many agree that vertical ocean farming is a great way to grow sustainable food that is not only nutritious but also cleans our ocean water at the same time.
James Beard Award-winning author of 'Eat Like a Fish' and Greenwave co-founder Bren Smith has written and spoken extensively on this subject, championing the symbiotic relationship of scallops, oysters, mussels and seaweed, grown together to maximize efficiency.
'The ocean is unique as an agricultural space,' Smith said. 'If we choose the right crops — kelp, scallops, mussels, oysters — we can farm without feed, fertilizers or fresh water, making it the most sustainable food on the plate. All we need is sunlight and ocean nutrients.'
If we can increase demand for these products, it does more than just grow a more sustainable seafood option. 'This is our chance to build an aquaculture sector that is regenerative out of the gate,' he continued, 'can help feed the nation, reduce pressures on wild fish stocks and create good, blue jobs.'
If the demand for these products goes up, then so too does the demand for the sustainable ocean farmers to grow it. Also? They are all delicious.
It can be really difficult to stay up to date on what seafood is sustainable at any given moment. I have been caught standing at a seafood counter trying to navigate the Monterey Bay Aquarium app, failing to figure out what kind of Atlantic halibut I'm looking at. Luckily, there is a much easier way.
The United States is the best country in the world at regulating its seafood supply and managing its fisheries, according to a 2016 peer-reviewed study, published by the National Academy of Sciences. We are, however, not nearly as diligent about the seafood that we import … and we import about 80% of the seafood we eat in this country.
If you read the work of people like author and investigative reporter Ian Urbina in the New Yorker, you find out that a lot of the seafood that we import comes cheaper thanks to horrifying working conditions and human rights violations, not to mention massive over-fishing and negative environmental impact. That's why, if you look at your options at the grocery store, you will frequently find that U.S.-caught and -farmed seafood is more expensive than the alternatives.
But if you just buy American, you are most of the way there when it comes to being sustainable. So if you go to the grocery store and see shrimp from Thailand, Mexico and the U.S. — just buy the American one.
Meanwhile, take a look at those cans of tuna you wanted to buy and try to find ones caught in the United States. Not processed in the United States but caught. It is a lot more difficult to find, and more expensive, than you are probably expecting. That's because for a can of tuna to cost 84 cents, some horrible things have to be happening to a lot of people before that can shows up at the grocery store.
Get over it. It's a huge ocean with lots of seafood. If we want to make real change in our oceanic food system, we have to change the way we eat and shop. But also, if you are only shopping American, it means looking at perhaps fewer but frequently also different options when purchasing fish filets in particular. This leads to one of the many great lessons from working with Kolender on 'How to Cook the Finest Things in the Sea.' Rather than give recipes that require a certain type of fish, we focused on breaking them down into three categories: steak-y; mild and flaky; and skin-on. Once you realize that you can put pretty much any type of fish filet into at least one of those three categories, you can cook any filet that you find.
Skin-on filets like Arctic char, halibut, ocean trout, rockfish, salmon and vermillion are all wonderful to cook in a pan for a crispy skin. Meanwhile steak-y filets like albacore, swordfish, tuna and wahoo are all great hard-seared in a pan or cooked on a grill. Mild and flaky filets like flounder, halibut, perch, any snappers and turbot are great in stews, soups, rice dishes, or even battered or breaded and fried.
Once you start thinking of things in these categories, it makes your shopping so much easier. It is often much better, as Kolender told me, to think about how you want to cook before you decide on what you want to cook.
Los Angeles has great seafood markets, such as Santa Monica Seafood and Fish King in Glendale, all of which would be more than happy to direct you to the best type of U.S.-caught fish for the type of cooking you're looking to do. But like any seafood market (and even many seafood stalls at farmers markets), they will sell whatever sells. That means it's up to you to vote with your dollars.
My favorite way to buy seafood in L.A. is to visit Wild Local Seafood Co., which shows up at farmers markets in Santa Monica, Santa Barbara, Hollywood, Mar Vista and Long Beach. Owner Ben Hyman cares a lot about sustainable fishing practices, and catches most of its seafood off the coast of Santa Barbara. The market usually has a relatively small list of options, but you can rest easy knowing that the quality and sustainability practices will be of the highest order. You will probably even learn about a delicious fish you didn't know about.
I know how easy it is to get caught in a cooking rut, focusing on the familiar. But whether we like it or not, I firmly believe that aquaculture will become a massive part of our foodway system in the coming years and decades. Companies are raising hundreds of millions of dollars to invest in the future of ocean farming, and if we want to have a say in that future, we have to become a part of that discussion now, before the decisions are made for us. The surest way to have a say in that is to put your money where your mouth is.

No, You're Not Cleaning Your Grill Enough. Here's How to Do It Right Ahead of July 4th
With the biggest grilling weekend of the year here, it's a good time to show your grill a little love. Sure, those char marks look great on a steak, but leftover grease and gunk from your last cookout can do more harm than you think, and not just to your dinner. A dirty grill isn't just gross, it's a health risk. Built-up grime can harbor bacteria that may contaminate your food. And while a little smoke adds flavor, no one's asking for last week's burnt chicken thigh to crash this weekend's burger party. It's also a safety issue. All that crusted-on grease and food residue can spark flare-ups or even a full-on grease fire -- not exactly the fireworks you want on the Fourth. On top of that, regular cleanings will help your grill last longer and perform better. For gas grills, clogged burners can block propane flow and mess with heat distribution. And if you let the bottom of your grill turn into a grease trap, rust is coming for it fast. So before you fire it up for hot dogs, ribs or veggie skewers, take a few minutes to clean out the crust. Your tastebuds -- and your grill -- will thank you. For this article, I used a propane-fueled model to illustrate the best grill-cleaning techniques, but this routine can work for charcoal grills, pellet smokers and kamado grills, too. Most experts suggest deep-cleaning your grill at least twice per year, with lighter, maintenance cleaning after each use. If you're a heavy griller (or not as good with the post-dinner clean), three times per year would be a better cadence. If you're a seasonal griller, you'll definitely want to give your grill a good clean before you put it away for winter and likely again in the middle of peak season. How to properly clean a grill 1. Open up the grill and pull it apart First, you'll need to open the grill and remove its various parts. This way, you'll be able to access the main grill chamber. Typically sitting below the grates, this is where heavy food particles tend to fall and grease drippings land. CNET Start with a cold grill. Open the hood, remove the grill grates and set them aside. Some propane gas models also have one or multiple metal heat diffusers that rest over the burners. If your grill has them, take those out too. 2. Clean the inside of the grill A lot of grease and food particles tend to collect inside the grill's interior, also known as the "grill box." Use a cheap putty knife (metal or plastic) or an old spatula to scrape the sides of the grill chamber free of as much gunk as you can. Any thin, flat tool will do. Just make sure it provides a good surface or handle to grip. You also might want to consider getting a pair of work gloves, too, since this is bound to be a dirty job. On charcoal and wood pellet grills, ash will accumulate within their coal trays and fireboxes. That in turn limits airflow, and ultimately affects cooking performance. And in the case of pellet grills, ash can cause misfiring of the pellet system. Sometimes this situation leads to a precarious over-firing condition when too much fuel ignites at once. Clear the burner tubes If you have a gas grill, one part that often gets clogged are its burner tubes. One symptom of dirty burners is reduced flame size. They may also burn with an orange color instead of the usual blue. Both indicate abnormally low temperatures and an underpowered grill. Typically a gas grill has multiple burner tubes, though some may have only one. Use a nylon or steel wire brush to gently clean the small holes on the tubes. Be sure to brush from the center of the tube outward, moving sideways (not up and down). Otherwise you may push debris into the tube or holes themselves instead of clearing them. Clean the grill grates Reassemble the grill, then turn it on to its highest temperature setting and close the hood. There may even be a cleaning level on your burner dials. After a few minutes, open the lid and scrape the grates vigorously. I recommend using a nonbristle metal grill brush, like the $21 Kona Safe Clean Grill Brush. It's made out of stainless steel and is bristle-free so it's safe for use on porcelain, ceramic, steel and cast iron surfaces. You can also use a nylon brush, but make sure to do this only when the grill is cold. Other options are the $17 GrillArt Grill Brush and Scraper or the $10 Char Broil Nylon Bristle Grill Brush. A time may come, at the start of grilling season perhaps, when deep cleaning is required. To loosen stubborn, carbonized grime, soak your grates in soapy water overnight. Prevent future buildup Certain practices can help discourage deposits of dirt and grease from forming in the first place. One method is to grease the grates of your hot grill with a little cooking oil right before you start cooking. In the same vein, scrubbing your grill grates with a raw onion is another tactic you can try. If you do have a grill brush without bristles, it's a good idea to scrape your hot grates both before and after grilling. Another tactic is to scrub hot grill grates with the open side of a sliced (in half) onion. The thinking here is that it seasons the grates while adding moisture. Organic compounds supposedly are released, too, which break down stubborn grease and dirt. I've found that it's not as effective as scrubbing, but it certainly creates a wonderful smell. Performing a full cleaning every few months is the best method to enjoy a grill that's spick-and-span. A little elbow grease goes a long way. Animal shelters are overrun with pets after July 4. You don't have to adopt to help.
Independence Day fireworks will fade, but lost or abandoned cats and dogs will suffer long after the final boom. Fear of fireworks is one of the most common challenges faced by dog owners. Animals will often display visible signs of anxiety − like shaking, pacing the room or hiding − when faced with the booms and flashes. Some pets will even run away, which is why it should come as no surprise that July 5 is among the busiest days of the year for pet shelters. Americans can take preemptive steps to keep furry family members secure during the festivities. But with an estimated 45% of households owning a dog, successful canine escape artists are inevitable. That's why it's so important to foster a robust network of local pet shelters. The frontline volunteers at these facilities will care for lost or abandoned pets until they can be reunited or paired with loving homes. Sadly, we are missing the mark in that regard. Local pet shelters across the country are drowning. Headline after headline describes how pet shelters operating on shoestring budgets are being overwhelmed with animals. 'Pet surrenders soar in Chicago, pushing city shelter to the brink,' one reads. Another warns: 'South Georgia animal shelters struggle with overcrowding as euthanasia rates climb.' A Colorado headline: 'Dog surrenders are soaring at Denver Animal Shelter.' While established, national charities are well suited to tackle certain societal problems, sheltering homeless animals is a different story. It's a national crisis that is most effectively tackled by community solutions. Your dog wants us to ban fireworks. Do you agree? Take our poll. | Opinion Give to organizations that provide the most help The key is directly supporting local pet shelters, rather than sending money to national groups headquartered in New York or Washington, DC. Large animal charities like the American Society for the Prevention of Cruelty to Animals (ASPCA) or Humane World for Animals, formerly the Humane Society of the United States, will produce flashy fundraising appeals and hobnob with politicians. But humble, laborious activities like caring for homeless cats and dogs all year are low on their priority lists. Neither group is affiliated with local pet shelters, despite sometimes having similar-sounding names. And while both of the large organizations feature compelling imagery of homeless cats and dogs to solicit donations, only a small fraction of fundraised dollars go to local pet shelters as financial grants. The ASPCA contributes about 2% of its more than $350 million budget. Humane World for Animals gives only 1% of its nearly $180 million budget. The best thing Americans can do to help alleviate the homeless pet crisis is to donate directly to, or volunteer at, their local shelters. Diverting a chunk of donor generosity that currently supports national groups to instead help local pet shelters would go a long way toward saving the lives of thousands of cats and dogs. A Fourth of July message from dogs: Why the loud fireworks? Can't you just wag your tails? | Opinion Companies and influencers also have a responsibility to support local shelters over large, national animal nonprofits. For example, one recent contestant on "Celebrity Jeopardy!" competed to win $1 million for Humane World for Animals. The game show's grand prize would more effectively help homeless cats and dogs if it funded a handful of local pet shelters that are strapped for resources. Evite, an online virtual invitation platform, is another example. The website currently offers users the opportunity to donate to the ASPCA after RSVPing to events like birthday parties or weddings. The pop-up message says it would 'give more animals the food, water, and shelter they need to survive.' Evite could better help homeless cats and dogs by directing visitors to support local pet shelters. Independence Day fireworks will fade, but lost or abandoned cats and dogs will suffer long after the final boom. Generous Americans should directly support local pet shelters to help these animals because national charities are dropping the ball.
