A Hutterite chicken butcher covered in blood … Tim Smith's best photograph

The Hutterites are an Anabaptist movement – they believe in adult baptism and pacifism. Like the Mennonites and the Amish, they emerged from the Radical Reformation in central Europe in the 1500s, but unlike them they live communally, with all goods and property shared among members of the community. Today, Hutterite colonies mostly exist on either side of the US-Canada border, where there are more than 500 of them.
In 2009, I was driving through Canada's Manitoba prairies in search of interesting photos for the newspaper I work for, the Brandon Sun, when I spotted some women working in the garden at Deerboine Colony. I knew a little about the Hutterites but not a lot, and pulled over to ask if I could make some pictures. The women were friendly and agreed, and I spent the afternoon chatting and photographing them.
One of the young women took a flip phone out and took some pictures of me while I was working. Until then, I would have assumed Hutterites avoid modern technology in much the same way Amish and many Mennonite communities do. But this woman had almost exactly the same phone as I did, and that's what hooked me. I had a series of discussions with the colony's minister, Tom, who was open to me coming back to learn more and take further photographs. At the time I thought: 'Here's a personal project I can sink my teeth into outside of my job and freelance work, and maybe spend a year on.' I've now been visiting Hutterite colonies for more than 15 years – a few dozen of them so far. I remain fascinated by their way of life, and want to show it in as nuanced a way as possible.
The colonies are very self-sufficient. Their members grow and raise the overwhelming majority of the food they eat. Deerboine has a poultry barn, and the life of an egg-laying chicken is about nine months. Every year there's a turnover as new hens are brought in for peak egg production and the last batch are slaughtered. When this photograph was taken, in 2015, I think they had around 11,000 chickens, and every able-bodied person in the community helped out in the two days of butchering.
The first time I approached Tom to ask whether I could photograph the process, he made a deal with me. He said: 'If you help out in the morning, you can photograph in the afternoon.' The chickens are stunned with an electric rod, then decapitated, then they go in a big drum that removes all the feathers before the carcass goes down a sort of assembly line to be cleaned and packaged to be frozen. I helped out with the cleaning part. I was vegetarian at the time, so it was an interesting experience, but it was fascinating to see how everyone worked.
Justin Hofer, who you see here, really stood out. Seeing him covered in blood, I wanted to make a portrait that showed this is hard work, and not pretty. About 80 to 90% of my Hutterite work is fly-on-the-wall documentary stuff, just waiting for things to happen, while the portraits tell the story a bit differently, giving more of an insight into individuals. They also terrify me, because I'm a fairly socially awkward person.
This portrait draws viewers in: you want to know the story behind it. Why is this young man covered in blood? It's a little shocking, and people in mainstream society can be uncomfortable with the idea of where their food comes from. Justin has since left the colony, as young Hutterites occasionally do, although some later return. They tend to do very well in the outside world as they have a reputation for being intelligent and hard-working. But there's clearly a huge draw to the kind of community life Hutterites practice – that closeness, not having to worry about losing wages if you get sick, or who's going to take care of you. There's a lot of joy and laughter. I can definitely see the appeal of Hutterite life.

Ask the head gardener: How can I get my clematis under control?

Dear Tom, I planted a Clematis 'Mayleen' by my fence about three years ago. It has grown rapidly, and this year had an abundance of beautiful pink flowers. Now the plant is growing on and on and looks a mess – and my neighbour doesn't like it growing over the fence. Also I have rose bushes planted near the clematis and the new shoots stick to the roses. I would love to have some advice on how to prune it, or what to do with it. – Eva Dear Eva, It makes a pleasant change to receive a question about a plant that is growing too well, but on this occasion, that doesn't mean that there are not a number of issues. Clematis enjoy growing in a sunny position (such as next to the fence that you provided for your 'Mayleen'), and like their roots to be in more cool and moist soil conditions. The spot that you have provided in your garden is perfect, which is why this vigorous climber is looking quite at home. Clematis montana (of which 'Mayleen' is a cultivar) sits in a collection of clematis known as Group 1. This group is characterised by its early flowering and quite often has a number of very vigorous species within it. As these clematis grow rapidly year on year, they soon outgrow most domestic situations such as fence panels. They should be pruned immediately after flowering, enabling them to put on fresh growth that will then produce flowers the year after. The way that I see it, you have a couple of options. The first is to rejuvenate the plant by cutting it down close to the base. A healthy Clematis montana often responds well to this treatment. This will trigger lots of fresh growth from the base that can then be trained to cover the fence with more growth towards the bottom of the plant. Immediately after flowering next year, shear off the stems so that they are tight against the fence, which will encourage fresh growth and keep the plant more compact. In all honesty, this clematis might be too big for that spot, but this pruning style is a way in which you might be able to keep the plant growing in that part of your garden for a number of years to come. There is potential to shear off the growth that has flowered in a less severe manner, but that will not be as conclusive as the rejuvenation technique. Looking at the other end of the extreme, an acceptance that this Clematis montana is too big for your fence will result in the opportunity to plant a brand new clematis that perhaps is more compact and suitable for that spot. Group 3 clematis flower later in the year on growth that is produced that spring and summer. Clematis viticella types can be very decorative and I find the easiest to prune because they simply get taken down to the ground each spring. Clematis tangutica, with its yellow flowers and gorgeous seed heads that persist into the winter, is another option that you could look at, being better-behaved than your monstrous montana. If you're looking to replace your clematis, then incorporate a couple of wheelbarrows of well-rotted compost or manure to reinvigorate the soil and encourage lots of strong growth from your new plant, and make sure to water it well for the first summer.

Dear Tom, I have infestations of ants in the polytunnel in my garden – they have destroyed the tender plants. I have tried all the various organic methods: paprika, chilli powder, white vinegar and drowning the nests; alas, to no avail. Any other ideas? – Liz, Cornwall Dear Liz, I'm so sorry to hear that Liz; growing plants can be challenging enough at the best of times, let alone adding a nest of hundreds, if not thousands, of ants into the mix. The presence of ants in our gardens or around our homes can be quite unnerving, but in reality, they provide an important part of a wider ecosystem, acting as food for many birds and mammals. Ants in lawns can be tolerated by simply removing the mounds of soil as they appear on the surface; it is best to remove the soil before mowing to avoid smearing the turf. When ants build a nest in a compost heap, that extra level of aeration can help accelerate the composting process, and therefore they cause little damage. Powders and boiling water aren't always that effective – although these methods can make us feel better for a fleeting period of time, because we feel that we've done something about it, very little else is achieved. Ants can cause harm when plants are particularly young, or low-growing to the ground, such as alpines or container plants, where the excavation of the soil can physically disturb and damage a plant. The warm and dry conditions that are created in your polytunnel will create an ideal environment for ants. There are a few techniques that you can adopt to discourage ants from nesting in your polytunnel, however. First, you can make the ground conditions less than ideal, forcing the ants to relocate to a less sensitive part of the garden. This is a more realistic approach compared to complete eradication, which is counterproductive when it comes to your garden ecosystem. It is a challenge to keep areas of soil biologically active in protected environments with fertile and moist conditions throughout the year, where no natural rainfall can hydrate the soil. Many of us come to plant our tomatoes and cucumbers in open ground in greenhouses and polytunnels in the late spring, and find that our soils are more like sawdust than the rich, moisture-retentive soil that we require. This is often the result of a degree of neglect over the winter. I would suggest keeping any open soil within the polytunnel regularly mulched and watered to make that area less hospitable and inviting for ants to take up residence. Secondly, you can look at applying nematodes (microscopic parasites) to the area, such as Steinernema feltiae (available online), which will prey on the larvae but not kill the adult ants. The combination of moist ground and the presence of nematodes is likely to deter the ants and encourage them to relocate, let's hope to an area outside of the polytunnel, which is less sensitive. Finally, if you have staging or tables within your polytunnels, apply a layer of petroleum jelly to your table legs or staging to prevent or discourage ants from climbing; this will keep them from accessing your young plants in pots, where the excavation can do a lot of damage. Generally, in a garden, ants do little damage to plants that are planted in the ground, but they encourage and protect aphids and other sap-sucking pests in their production of honeydew. This process is sometimes described as the ants 'farming' the aphids. The presence of ants can be detrimental to the plant in the way that they protect the aphids from predators such as ladybirds and allow those populations to build up to the point that they can weaken the plant by reducing its vigour and photosynthesising capabilities. Keep an eye on aphid populations within your garden and use SB Plant Invigorator once or twice a week when you see an outbreak, to keep those numbers under control.
