Culinary art of spice fusion: Chef shares how to pair pan-asian cuisine with Indian flavours
In today's hyper-connected world, cuisines know no boundaries. As they go global, they absorb local, native flavours as well, creating a wonderful culinary exchange that feels refreshing. Pan-Asian cuisine, which typically includes dishes from East and Southeast Asia, such as those from Thailand, Japan, Korea, China, and more, is gaining popularity in India. He said, 'In recent years, there has been an increased fondness for Pan‑Asian cuisine amongst Indian diners, not just for its novelty but for its adaptability. This adaptation isn't about fusion as a gimmick; it's about genuine flavour dialogue of an exchange between Asia's classic ingredients and India's rich taste traditions. Serving authentic Asian dishes in India is not about changing the soul of the cuisine but about thoughtfully pairing it with the bold, layered tastes that Indian guests love." One of the key secrets to successful fusion, as explained by Chef Avinash, is using local Indian ingredients, sometimes as equivalents, while following the principle of flavour synergy. He further elaborated on the essential Asian flavour notes and how to make them complement India's spice profile. Chef Avinash said, 'We curate Pan Asian menus that honour traditional techniques while thoughtfully incorporating subtle local influences. Each dish is designed to strike a harmonious balance among the five essential Asian tastes sweet, salty, sour, bitter, and umami, complemented by familiar Indian spice notes. " He adds, "For example, adding chilli flakes to our kimchi fried rice evokes the flavour profile of Gochugaru, the traditional Korean chilli powder, while also resonating with the warmth of Indian chilli powder. The key here is to infuse symmetry into those rich palates so that a culinary authenticity is not compromised, but crafted in a manner to cater to the tastes of Indian diners.' Balance is a central focus in Indo–Pan-Asian fusion cuisine, as the Indian spice profile differs significantly from the quick, sharp heat typically found in many Asian dishes. He added, 'Indian cuisine embraces robust, lingering spice, while Asian dishes often use sharper, quick heat, and pairing Asian flavours for Indian palates is an art of balance, not compromise. Try to combine Asian chilis with familiar Indian spices. Add fresh green chilli or black pepper to complement Asian peppery notes." Tips on how to pair asian cuisine with indian flavours Locally sourced ingredients can also be added in the pan-asian cuisine, infusing desi touch.(Freepik) 1. Understand the core flavours: When pairing for an Indian palate, think of how to align with Indian staples. Go for desi parallels, rooted in core flavours. For instance, tangy tamarind resembles Indian kokum or raw mango; miso's depth is similar to rich Indian gravies. 2. Use local ingredients: For Thai-style sourness, opt for kokum or raw mango. Use locally available fish like kingfish or pomfret to recreate Japanese teriyaki. Incorporate seasonal greens in Asian stir-fries. This will keep the flavours authentic yet comforting. 3. Pair with balanced sides: Serve spicy curries with jasmine rice or fluffy millet and offer stir-fries with warm phulkas or steamed buns. Cool down heat by pairing with fresh salads or yoghurt dips.

Bag with gold fails to lure honest TTI in Vijayawada
VIJAYAWADA: A Travelling Ticket Inspector (TTI) from the Vijayawada Division of South Central Railway has earned praise for his honesty and swift action. B. Avinash, TTI/Amenities/Kakinada Town, was on duty aboard Train No. 12738 Goutami Express (Rayanapadu to Kakinada Town) when he found an unclaimed bag on Berth No. 35 in coach A3. He immediately alerted the escorting RPF Head Constable and, in the presence of passengers and with video recording for transparency, opened the bag. It contained gold ornaments worth approximately Rs 2 lakh, Rs 37,000 in cash, an Aadhaar card, and other identification documents. Using the contact number on the Aadhaar card, the rightful owner was identified and confirmed ownership. Avinash ensured the safe return of the bag in the presence of RPF staff. The passenger expressed gratitude to Indian Railways for the honest handling of the situation. Senior Divisional Commercial Manager Rambabu Vavilapalli praised Avinash, stating his act reflected the core values of the Railways. Divisional Railway Manager Narendra A Patil also lauded the TTI's integrity, saying it inspires confidence among passengers and demonstrates the ethical foundation of Indian Railways. Both officials commended Avinash for his exemplary conduct and dedication to public service.

TTE returns bag containing valuables to passenger
A Travelling Ticket Examiner (TTE), B. Avinash, of the Vijayawada Division, South Central Railway (SCR), proved his honesty by handing over a bag left in the train by a passenger. Gold jewellery, worth about ₹2 lakh, ₹37,000 cash and an Aadhar Card were found in the bag. The TTE noticed the bag in the A3 coach of Gowthami Express (from Rayanapadu to Kakinada town). Mr. Avinash alerted the on-duty Railway Protection Force (RPF) personnel and called up the passenger. After confirming its ownership, the TTE handed over the bag to the owner, who thanked Mr. Avinash, the RPF and the Ministry of Railways for the sincerity of the staff. Divisional Railway Manager (DRM) Narendra A. Patil, Senior Divisional Commercial Manager (Sr. DCM) Vavilapalli Rambabu and other officers on Friday commended the TTE for his sincerity.

4 teens drown after being swept away in Sharda river
Shamli: Four teenagers drowned after being swept away while bathing in Sharda river near Devraghat in Sitapur district, police said on Saturday. Avinash, Utkarsh, and Devansh Singh, all 14, and Rahul Kumar, 13, all residents of Hasanpur Katauli village in Lakhimpur Kheri district, were bathing in the river near Akbarpur village under Tambour police station around noon on Friday. The boys waded into deep waters and were caught in a strong current. Residents attempted to rescue the boys and alerted the police. Though the site falls under the jurisdiction of Isanagar police station in Kheri, Tambour police responded swiftly and began search operations. NDRF teams were also deployed at the scene. By Friday evening, the bodies of Avinash and Utkarsh were found a short distance downstream. They were sent for postmortem examination. The rescue operation was paused on Friday night due to reduced visibility. The search for Rahul and Devansh resumed at 8am on Saturday, with local divers and disaster response teams scouring the river. Their bodies were recovered within a kilometre of the site in the evening. Tambour SHO Rakesh Singh said, "The victims' families were informed about the drownings on Friday, and we have not received any complaints from them. All four victims were from labourer families. Senior officials have instructed us to investigate the circumstances surrounding the incident. Further action will be taken accordingly."
