Food Picks: New artist-inspired menu at Shisen Hanten by Chen Kentaro

SINGAPORE – One-Michelin-starred Shisen Hanten by Chen Kentaro has rolled out a seven-course menu ($108++ a person) inspired by the friendship between two late cultural icons from Sichuan, China – chef Chen Kenmin, considered the Grandfather of Sichuan Cuisine in Japan, and renowned Chinese ink painter Zhang Daqian.
The menu revives dishes once enjoyed by Zhang, who is also known to be a f ood connoisseur, during his visits to the Shisen Hanten restaurant in Tokyo.
My favourite dishes on the menu are the chicken liver chawanmushi with a rich crab roe sauce and a soupy version of dan dan noodles, served with minced pork and a chicken soup made with sesame paste, Japanese soya sauce and housemade chilli oil.
I guess Zhang is also quite the meat lover, as the menu includes chilled steamed chicken with Sichuan sauce; tea smoked duck; and fried chicken with hot pepper sauce, a spin on gong bao chicken with painstakingly scored mushrooms and pepper s.
Besides this menu, the restaurant has also launched its new summer menu for its eight-seat Chef's Table space, priced at $268++ a person. It will run till August or September, depending on the seasonal availability of the ingredients.
